Pretty Hot Pepper Cream Cheese Recipe

I'm sure many of you have heard of serving hot pepper jelly over cream cheese as an easy appetizer.  How about sweet and spicy Pretty Hot Peppers over cream cheese?  Easy, elegant, and only two ingredients (three if you count the crackers).  Like it sweeter?  Try our Pretty Peppers.

My children hate peppers, I try to disguise them as best as possible when I'm cooking, but they LOVE LOVE LOVE Cherchies® Pretty Hot Peppers and/or Cherchies® Pretty Peppers, especially served this way as an appetizer. They're perfect in eggs, casseroles, salads, crab cakes, dips, and so much more.  You need to try them too!

Preparation

Spread cream cheese onto a plate.  Spoon the Pretty Hot Peppers or Pretty Peppers over top the cream cheese.  Or, be daring and dollop one half of the cream cheese with Pretty Peppers and the other half with Pretty Hot Peppers and let your guests decide:)  Enjoy!

Serve with crackers.  Easy Peasy...done!

Happy May!

This is my favorite season.  Flip flops, sunshine, lemonade, barbeques, swimming, and spending quality time with the family to unwind, and of course Memorial Day, the unofficial beginning of summer.

I wish Memorial Day came at a different time of the year, so it could receive the recognition it deserves, rather than the last Monday of the month of May, a month filled with celebrations...Cinco de Mayo, Mother's Day, graduations, school coming to an end, and according to daysoftheyear.com, May is officially Barbeque month!  

But then again, our celebrations are possible due to the gifts that have been bestowed upon us from our servicemen and servicewomen, past and present. 

Let us reflect, May is also a month to remember those who have fought for our freedom. "Thank you to every serviceman and servicewoman who has given their all to guarantee us the wonderful freedom we enjoy. May we never forget nor take for granted what their sacrifice means to us!" - Jan C.  Well said!

Cream Cheese Pie Recipe

My mother-In-Law ("Mimi") and I share the same passion for entertaining, but without all the fuss. Her mantra, which I have adapted over the years, is "Easy and Elegant," and her Cream Cheese Pie is one of the many short-cut recipes she has shared with me.

Cream Cheese pie was a foreign concept to me when I first married her son many years ago, but then again, cooking was a foreign concept when I was first married:) Boy, how things have changed. Thank goodness my hubby didn't marry me for my cooking skills back then.

This sweet, creamy, delectable pie is essentially a cheesecake sans the crust baked in a pie plate. Easy and elegant, and a must-have for your recipe collection. Add one of our fruit sauces for a finishing touch and voila!

Cream Cheese Pie Recipe

Ingredients

  • 1 lb. cream cheese, softened (room temperature)

  • 3 eggs

  • 2/3 cup sugar

  • 1/2 teaspoon (tsp) sugar

  • 1/2 teaspoon (tsp) good vanilla

Topping

  • 1 cup sour cream

  • 3 Tablespoons (Tbsp) sugar

  • 1 teaspoon (tsp) good vanilla

Berry toppings (optional) 

Preparation
Beat the first five ingredients together until smooth.  Pour into a lightly greased 9" pie plate.  Bake at 30 minutes at 350.  While the pie is baking, make the sour cream topping by mixing together the sour cream, sugar and vanilla.  

When the pie is finished, cool for 20 minutes and spread the sour cream mixture on top. Return the pie to the oven and bake an additional 10 minutes at 350 degrees.

Make the fruit topping by combining the berries and preserves in a small sauce pan, and cook for about 10 minutes on low.  (Go ahead and mix it up...for this recipe, I mixed our Blackberry Preserves with blueberries).  You could easily use our Cherry, Strawberry, or Apple Butters in lieu of the preserves and substitute the blueberries with cherries, strawberries, or apples.  

Cool for 5 minutes and spoon on top of cream cheese pie.  Enjoy!

Chicken Pad Thai Recipe

Cook Time:  30 minutes  Difficulty:  Easy

Don't be scared by the number of ingredients, it's worth it and relatively easy.  This recipe is my twist on my favorite Pad Thai dish.  Typically Pad Thai does not include peppers, but I added for color and to sneak vegetables into this dish for my family:)

Ingredients

  • 2 Tablespoons coconut oil. divided

  • 4 (4 oz.) chicken breasts, cut into thin strips

  • 1 Tablespoon Cherchies® Chardonnay Lime & Cilantro Seasoning

  • 1 teaspoon pepper

  • 1 red pepper, sliced thin

  • 2 green onions, chopped (white part, finely chopped, green part coarsely chopped saved for garnish

  • 1/2 lime juice

  • 1 clove minced garlic

  • 1/4 cup water

  • 1/4 cup creamy peanut butter

  • 1/2 cup coconut milk

  • 1/2 cup cilantro, chopped

  • 1 10 oz. rice noodles

  • 1 cup bean sprouts

  • 1/2 cup chopped peanuts (optional)

Preparation

Cut chicken into thin strips, and generously sprinkle the chicken with Cherchies® Chardonnay Lime & Cilantro Seasoning and pepper.  Mix in a large bowl to coat.  
Place a large skillet on the stove, and melt 1 Tablespoon of the coconut oil on med/low heat.  After a few minutes, add the chicken to the heated skillet, and cook the chicken for about 10 minutes, stirring occasionally, until almost cooked.  Remove the chicken from the pan and set aside on a plate.  

While chicken is cooking, prepare the noodles according to package directions.  If not using immediately, drain the cooked noodles and soak in cold water.

To the same skillet, add the minced onions, the pepper strips, and the rest of the coconut oil.  Cook until almost tender.  Remove the peppers and onions and add to the same plate as the chicken.
Set aside.

Add water to the pan and scrape the bits from bottom with a wooden spoon.  This is where all the flavor is and you don't want to miss it:)  Add the fish sauce, lime juice, peanut butter, garlic, coconut milk, and Terrapin Ridge Farms Thai Aioli.  Stir.
Add chicken and peppers back to pan.  Cook on low for a few minutes.

Make a well into the mixture, and add the eggs.  Allow them to cook for a few minutes undisturbed, and then stir occasionally.  After the eggs have been cooked, add the bean sprouts in the last few minutes of cooking.

Drain the cooked noodles.  If your skillet is big enough, add the noodles and gently mix the ingredients to combine and cook for a few minutes to heat ingredients.  If your skillet is not large enough, don't fret, grab a large bowl and mix the ingredients with tongs until combined.   Garnish with the scallions (the green part of the green onions), cilantro, lime wedges, and chopped peanuts (optional).  Yum!  Enjoy!
