Stuffed Pepper Mummy Recipe

So, it's October, which means Fall.  Contrary to the typical conjured images of brilliant garnet, amber, and gold leaves, where the crisp air commands sweaters and bonfires, such is not the case in Pennsylvania.  It is 80 degrees and green!  I do not mind holding onto the tropical weather a bit longer, but at the same time, it is hard to think about Halloween when it feels like summer!

Do you like Halloween?   I don't know whether it is the inner child in me or the fact we have children, and their excitement over the years has excited us, but I have always been a sucker for party themes, themed food, theme decorations, etc., and Halloween is no exception.  

These stuffed mummy peppers are so stinking cute and the epitome of Halloween, spooky and fun (even if it is 80 degrees where you live)! They are quick and tasty, a fabulous use for leftover peppers, and are a delightful Halloween appetizer or snack. The filling possibilities are endless, but our favorite is our Vegetable Cream Cheese Spread, which is chock full of fresh vegetables and herbs.  You could also use chili or our Tomato Basil Cups filling to stuff the peppers. And talk about quality time in the kitchen!  Assembling the mummies is an ideal project for spending time with the kiddos, regardless of age.  Our children are teenagers now, but they still enjoy helping in the kitchen, especially when food is fun! Priceless!

Serve these mummies with our Festive Deviled EyeballsWitches Cheese BroomsSpooky Jack-o-Lanterns, and Spooky English Muffin Pizzas for a very eerie Halloween feast!

*Note: for those with a spicier palate, instead of mini peppers, you could always substitute jalapeno peppers.

Ingredients 

  • 1 bag mini peppers (usually found in most grocery stores or bulk discount grocery stores, costco, Bj's, etc.), sliced in half, seeds removed

  • Veggie Cream Cheese Spread Recipe  orTomato Basil Cup filling recipe

  • 1 can refrigerated crescent roll dough, cut into thin strips (we used Pillsbury's newest product, crescent sheets.  You could easily use crescent rolls and pinch the seams together before cutting).

  • Googly candy eyeballs (Wilton, I found these at my local party store)

Preparation

Preheat oven to 350 degrees.  Wash and cut peppers in half.  Remove seeds.  

Line a baking sheet with parchment paper and lay out pepper halves.  Fill each pepper with cheese mixture (see above).  Set aside.  On a lightly floured surface, with a sharp knife, cut the crescent rolls into thin strips (about 1/2 inch).  Carefully wrap the peppers, criss crossing the dough to resemble a mummy.  

Bake at 350 degrees for about 10 minutes, or until dough is golden brown.  Remove from oven and allow to cool for five minutes.  Add googly candy eyes for that last minute spookiness.  (Important- do not be tempted to put the eyes on before baking, as they will disappear, literally, they will melt! Not that I've done that...ahem;) Serve and enjoy!

* Note: These pepper mummies could easily be made ahead and frozen before baking.

Tex-Mex French Bread Pizza Recipe

Difficulty:  Extremely Easy!

I know there are some leftover haters out there. It's okay...I confess, I used to be one of them! Growing up, I did not understand the concept of eating a meal twice in a row, so as you can imagine, our dog was well-fed...sorry Mom if you're reading this...now you know;) Also, when it came to leftovers and wasting food, another thing I did not understand, my mom would often refer to a money tree growing in the backyard...except I never saw one!  Crazy parents! :)

As a mom of three, I totally get the concept of leftovers, saving money, wasting less, and of course, the money tree. (I have been known to tease our teenage children occasionally...they look at me like I am crazy...crazy kids).  

I see leftovers as a creative challenge to create new masterpieces, to save money, and to waste less. Amen!  For this round of leftovers, I made Tex-Mex French Bread Pizzas, using leftover chicken, sweet and robust Cherchies® Black Bean & Corn Salsa, savory Cherchies® Chardonnay Lime & Cilantro Seasoning Blend, and of course French Bread and gooey cheese!  Sounds dreamy, right? These pizzas hit all the flavor notes and were devoured in minutes!

If you have not added French Bread Pizzas to your recipe cache, you need to do so, and this Tex-Mex version will quickly become a family favorite!  Your pizzas will disappear and so will your leftovers! The money tree?  Not so much!

Ingredients

Preheat oven to 350 degrees.  Slice a baguette or Italian bread in half vertically.  Place bread halves on a baking sheet.  Spread each slice with a generous amount of spaghetti or pizza sauce (maybe 1 cup?  It all depends on the size of the bread).  Sprinkle the diced chicken or turkey over the bread halves.

Next, add the Cherchies® Black Bean & Corn Salsa over the chicken.  Sprinkle about 1 teaspoon of Cherchies® Chardonnay Lime & Cilantro Seasoning (or to taste).  Of course, what pizza wouldn't be complete without the cheese?  Add the cheese to you heart's delight...add some more...you decide, it's ok!

If you're wondering about the brown stuff in the first picture, it's taco meat.  I also had leftover taco meat I added to one half of the pizza (a previous pizza night:)  Plop the pizzas into the oven and bake for about 10-15 minutes, or until pizza is golden brown and the cheese is melty.  Slice into individual portions and enjoy!

Ingredients  

  • 4 slices of French Bread, crusts removed, cubed

  • 1 lb. Canadian bacon, diced

  • 8 eggs, beaten to blend

  • 3/4 cup shredded cheddar cheese

  • 3/4 cup shredded Jalapeno Jack Cheese

  • 1 1/2 Tablespoons (Tbsp.) Cherchies® Lem'n Dill Seasoning Blend

  • 4 cooked potatoes, sliced

Preparation
Lightly grease a 9x13 inch baking dish and set aside.  Wash potatoes.  In a medium pan, boil potatoes (ok to leave skin on) until potatoes are al dente (or just about cooked). Drain the potatoes.  Allow potatoes to cool before slicing.

Dice Canadian bacon.

Arrange the bread cubes and potatoes in the bottom of prepared pan.  Then add diced bacon.  Pour beaten eggs over top (I took this photo before I beat the eggs).  Top with cheese and Lem'n Dill.  

Cover with foil and refrigerate overnight.  
When ready to bake, preheat the oven to 350 degrees.  Remove foil.  Bake the casserole until eggs are set, approximately 35 minutes. Cool 5 minutes.  Serve hot and enjoy!

I love experimenting in the kitchen with new recipes, new flavors, new textures, and new uses for leftovers, and this recipe in particular caught my eye.  My hubby calls these type of recipes, "girlie" (meaning he won't touch them), but I call them "all the more for me and my friends" recipes;)

This "girlie" recipe is adapted from Lively Table, with a few Cherchies® tweaks, but it's full of flavor and texture...kind of like me :), and it features our our award-winning Cherchies® Champagne Mustard, juicy blackberries, and delicious melty cheese.  Yum! This flatbread would make the perfect light appetizer or lunch.

Ingredients

  • 1 fresh pizza dough (Feel free to use your favorite flatbread as a substitute)

  • 2 tsp olive oil

  • 1 teaspoon (tsp) Cherchies® Garlic'n Herbs Seasoning Blend

  • 1 Tablespoon (Tbsp.) Cherchies® Champagne Mustard

  • 1 (4oz.) ball fresh mozzarella cheese, sliced into thin slices

  • 1/4 cup thinly sliced red onion

  • 1/4 cup shaved fennel, plus 1-2 tbsp fronds for garnish

  • 2-4 oz thinly sliced grilled chicken (about 1/2 small breast). Leftover chicken is also perfect

  • 1/2 cup blackberries

  • 1-2 tbsp balsamic reduction

Preparation

  1. Preheat oven and pizza stone to 425° F.

  2. For the Balsamic Reduction, place 1/4 cup of Balsamic vinegar in a small sauce pan. Cook the vinegar on medium-low until vinegar has reduced to a thick syrupy consistency (about 2 Tablespoons).

  3. Roll out the pizza dough and place on a preheated pizza stone.

  4. Lightly spread oil over crust. Sprinkle Cherchies® Garlic'n Herbs Seasoning Blend over the dough. Next, spread the Cherchies® Champagne Mustard over the pizza crust. Then top the crust with cheese, onion, fennel bulb, and chicken.

  5. Bake the loaded flatbread for 15-20 minutes or until the cheese is melted and bubbly. Remove from the oven and sprinkle with fennel fronds (fancy for the green fennel tips, chopped), blackberries, and drizzle with the balsamic reduction. Cut into squares and serve immediately. Enjoy!
