Chocked full of fresh vegetables, this tasty colorful salad is the perfect side dish or meal. 

I love this tangy greek-style pasta salad because it is very easy to make and is the perfect side dish to bring to your next party or potluck.  The flavors intensify if made a day ahead.  Add chicken for a light refreshing meal.




Cook orzo pasta according to package directions.  Drain Pasta.  In a large bowl, place the chopped tomatoes, cucumbers, and onions.  Season with Cherchies® Garlic Seasoning.

Add the drained orzo to the salad.  Then add Cherchies® Pretty Peppers and lightly season with pepper. Right before serving, add the Lemon Honey Vinaigrette.

Next add the Feta cheese and mix to combine.  Add more dressing to taste.  Serve immediately. (*The flavors intensify if made a day ahead).

Tex-Mex Burger Recipe

Burger lovers, be prepared to be blown away! This Tex-Mex burger recipe is a force to be reckoned with, as it hits all the flavor notes, sweet, spicy, and smoky, all wrapped up in one lip-smacking package!

Inspired by a leftover jar of our sweet and robust Black Bean & Corn Salsa, my mission was set, to incorporate the leftover salsa and create a burger recipe that would send our taste buds into overload.  Mission accomplished!  This burger was a huge hit with our family!  Are you salivating yet?  Hang in there!

Aside from the tasty toppings, one key to this delicious burger is no-doubt, the freshly ground meat. A few years back, our friends introduced us to the idea of homemade ground meat, and it has truly taken our burgers to the next level.  Ask your grocery store butcher to grind the meat for you, or grind it at home.  We purchased a food grinder attachment for our mixer, but there are plenty of other meat grinding options if you don't have a mixer.   

Seriously consider adding this palate-tantalizing recipe to your favorites.  You will not be disappointed and your family will thank you! These would also make rockin' sliders for your next Game Day menu, everything the same, except smaller.  

Serve these burgers with our Cilantro Lime Corn on the Cob or our Herbed Sweet Potato Fries and our Best Darn Colesalw for a complete meal.  



If grinding your own meat, cut the meat into 1-inch strips or pieces.  Grind the meat with a meat grinder into a large bowl (you can certainly use store-bought ground meat).  Add the egg, Cherchies® Grilling Rub & Seasoning Blend, and Worcestershire sauce to the meat.  Mix until just incorporated (meat tends to toughen up the more it is handled).  Divide the meat into 4 equal portions (more if you would like smaller burgers).    

Lightly oil the grill with cooking spray or oil.  Turn the grill onto high, then low after a few minutes. Make an indent in the center of the burgers.  This allows the burger to cook evenly.

Grill burgers for about 4-6 minutes on each side, depending on your "pink preference".  Add the cheese to the burgers the last couple of minutes of cooking.  Lightly toast the rolls either for a few minutes on the grill or broil for a few minutes in the oven.  

Now the fun part, building this beautiful tasty burger!  Arrange the rolls on a tray or plate.  Spread about 1 Tablespoon of the Terrapin Ridge Farms Chipotle Aioli onto one roll half.  

Next add the Chardonnay Guacamole to the other half to the other half, followed by a slice of onion.

Add the lettuce to the aioli half and the burger to the guacamole half, and dollop the burger with about 1 Tablespoon of Cherchies Black Bean & Corn Salsa.  Place the lettuce half over the burger, pierce the burger with a large pick, and wait for it...

A juicy, mind-blowing, flavorful, Tex-Mex burger!   Grab some napkins and enjoy!

Pumpkin and Bacon Grilled Cheese Sandwich Recipe

You had me at bacon...and cheese...but pumpkin, salty bacon and melty cheese?  Sounds crazy huh?  This sandwich is packed with flavor and will tantalize your taste buds!


  • 4 Tbsp Terrapin Ridge Farms Pumpkin Honey Mustard
  • pinch Kosher salt
  • 4 slices Italian bread (or any crusty bread)
  • 2 slices cooked bacon or ham
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 cup grated Monterrey Jack cheese
  • 2 Tbsp butter, room temperature

Spread Terrapin Ridge Farms Pumpkin Honey Mustard evenly on two slices of the bread. Divide cheddar cheese evenly over the two slices with the mustard.

Break bacon slices in half and place two halves over the slices with the cheddar cheese. Sprinkle the Monterrey Jack cheese over the bacon and top with remaining bread slice. Spread 1 Tbsp butter over top of sandwiches. Melt remaining 1 Tbsp of butter in cast iron skillet over medium heat. Place sandwiches in skillet and cook over medium-low heat for 5 minutes or until cheese begins to melt and bread begins to toast.

Carefully flip sandwiches and cook on second side for another 5 minutes or until cheese is fully melted and bread is toasted. The idea is to cook low and slow until the cheese is melted without burning the bread.   Remove from heat.   Slice in half and enjoy!

Cream Cheese Pie Recipe

My Mother-In-Law ("Mimi") and I share the same passion for entertaining, but without all the fuss.  Her mantra, one that I have adapted over the years, is "Easy and Elegant", and her Cream Cheese Pie is one of the many short-cut recipes she has shared with me.

Cream Cheese pie was a foreign concept to me when I first married her son many years ago, but then again cooking was a foreign concept when I was first married:) Boy, how things have changed. Thank goodness my hubby didn't marry me for my cooking skills back then.  

This sweet, creamy, delectable pie is essentially a cheesecake sans the crust and baked in a pie plate...easy and elegant, and a must-have for your recipe collection. Add our blueberry sauce for a finishing touch.  Voila!

Cream Cheese Pie Recipe


  • 1 lb. cream cheese, softened (room temperature)

  • 3 eggs

  • 2/3 cup sugar

  • 1/2 teaspoon (tsp) sugar

  • 1/2 teaspoon (tsp) good vanilla


  • 1 cup sour cream

  • 3 Tablespoons (Tbsp) sugar

  • 1 teaspoon (tsp) good vanilla

Berry toppings (optional) 

Beat the first five ingredients together until smooth.  Pour into a lightly greased 9" pie plate.  Bake at 30 minutes at 350.  While the pie is baking, make the sour cream topping by mixing together the sour cream, sugar and vanilla.  

When the pie is finished, cool for 20 minutes and spread the sour cream mixture on top. Return the pie to the oven and bake an additional 10 minutes at 350 degrees.

Make the fruit topping by combining the berries and preserves in a small sauce pan, and cook for about 10 minutes on low.  (Go ahead and mix it up...for this recipe, I mixed our Blackberry Preserves with blueberries).  You could easily use our Cherry, Strawberry, or Apple Butters in lieu of the preserves and substitute the blueberries with cherries, strawberries, or apples.  

Cool for 5 minutes and spoon on top of cream cheese pie.  Enjoy!
