Lemon Pepper Chicken Legs Recipe

Summer means grilling! My family and I grill year-round, and during the winter, my brave hubby battles the elements and grills in his winter coat and snow boots. I'm not that brave. I'm a wimp in the cold and opt to grill inside with my stove's attachment.

This easy recipe requires only a few ingredients and is perfect for those impromptu get-togethers. You could easily use this recipe on chicken breasts, wings, etc., but legs were the choice this time, and I chose to use Cherchies® Lem 'n Pepper Spicy Blend

Try our other flavorful spices too! (I usually make a batch of chicken legs with an assortment of our seasoning blends and have our guests choose their favorites). This recipe would be a lot of fun for a game night meal.

Ingredients

**(Could substitute Cherchies®Select Grilling Rub & Seasoning, Cherchies®Chardonnay Lime & Cilantro Seasoning, Cherchies®Garlic Seasoning, Cherchies®Pepper Pizzazz Seasoning, Cherchies® Salsa Seasoning, or Cherchies®Pepper 'n Lime Seasoning for a completely different taste...or mix them up!)

Preparation

Light the grill and turn it on high.  After five minutes, turn the grill down to low.

Brush Olive oil on Chicken legs.  Generously coat all sides of chicken with Cherchies® Lem 'n Pepper Spicy Blend (or any of our seasoning blends).

Place chicken legs on the grill and cook, turning every five minutes until juices run clear.  The result, lovely, juicy grilled chicken legs.  Enjoy!

Preparation

Spray 4 to 6 skewers with cooking spray. Put ingredients on a skewer in the order they are listed in the recipe. (Skewer the sausage through the casing, leaving the cut edge open for even cooking. Skewer the shrimp through the length of the shrimp.)

Place skewers on a cookie tray and brush generously with Brush 'N Broil, turning to coat evenly on all sides.

Place in refrigerator for at least 2 hours. Place on grill over medium heat and cook for about 5 minutes per 1/4 turn.

Sprinkle with Lem'n Pepper Spicy Seasoning Blend during the last two minutes of grilling.

How was your weekend? Our summer kickoffs may have changed this year, but hopefully, everyone enjoyed themselves with family and stayed safe at home. The weather was finally beautiful here in Pennsylvania, so we all opted to go outside, enjoy the weather, and have a backyard family bbq, just the five of us. First on the menu was Peachy Chicken & Vegetable Kabobs.

Keeping holiday gatherings normal right now is an understatement, and with limited ingredients and limited trips to the grocery, it changes how we cook. Kabobs lend themselves to whatever protein and vegetables you have on hand, and for this holiday weekend, I made one of our family’s favorites, with a peachy twist. I added Cherchies Vidalia Onion Peach Salsa to the mix and hoped for the best. Probably not the best time to experiment, but challenging my family’s palate is something I often do:). Luckily my experiment worked, and my family devoured the kabobs.

Ingredients

  • 2-3 Chicken breasts, cut into cubes (more for a crowd)

  • 2 Tablespoons (Tbsp.) Cherchies Garlic Seasoning (Can substitute Cherchies Garlic'n Herbs No Salt Seasoning)

  • 1 teaspoon (tsp) pepper

  • 2 cloves garlic, minced

  • 1/2 cup soy sauce

  • 1/2 cup Cherchies® Vidalia Onion Peach Salsa

  • 1/4 cup hot sauce

  • 1/2 Pineapple cut into 1 inch chunks (scales removed and cored).

  • 1 red pepper, washed, seeded, and cut into 1 inch pieces

  • 1 yellow pepper, washed, seeded, and cut into 1 inch pieces

  • 1 small container Baby Bella Mushrooms, washed with stems removed and cut in half

  • 1 medium onion, diced into 1 inch pieces

  • Cooking spray

  • Skewers (soaked 30 minutes prior to cooking)

  • Additional 1/2 cup Cherchies® Vidalia Onion Peach Salsa for dipping (optional)

Preparation

In a small bowl, mix the garlic, soy sauce, Cherchies® Vidalia Onion Peach Salsa, and hot sauce. Cut the chicken into 1 inch pieces and place into a medium bowl. Season the chicken with Cherchies® Garlic Seasoning and pepper. Mix. Add 2/3 of the marinade to the chicken. Mix thoroughly. Cover the bowl with plastic wrap and refrigerate several hours.

Wash and chop the vegetables and pineapple, and place in a shallow pan. Add the rest of the marinade and mix until completely covered. Cover with plastic wrap and refrigerate for several hours.

30 minutes prior to grilling, soak the skewers in a shallow casserole dish.

*Remove the marinated chicken and vegetables from the refrigerator. Save the marinade from the vegetables to use for basting the kabobs later. (If you want to use the marinade from the meat, make sure to boil the marinade until it reaches a temperature of at least 165 degrees. This way, any harmful bacteria will be removed). See FDA Guidelines.

Thread the chicken on separate skewers from the vegetables. (I find this works better with the different cook times of the chicken and vegetables). Next, alternate the peppers, onions, mushrooms, pineapple on different skewers in any arrangement you prefer.

Spray the grill with cooking spray, light the grill, and turn grill onto high for a few minutes. We use a gas grill, but you can easily grill these on a charcoal grill.

When you are ready to cook the skewers, turn the grill down to low.  Place chicken on grill and cook for a few minutes on each side.

After the chicken has cooked for a few minutes, add the vegetable/pineapple skewers to the grill, and cook for a few minutes on each side. I love adding pineapple to the vegetables because it adds so much flavor. If you've never had grilled pineapple, you're in for a real treat!  All the sugars in the pineapple come to life, for flavors that will make your taste buds tingle.

Baste the skewers with the leftover vegetable marinade as the kabobs cook.  *(See above guidelines for marinade safety). The chicken should no longer be pink on the inside and the vegetables should be tender crisp with grill marks.

Remove the kabobs from the grill and set aside on a platter for about five minutes. This allows the meat to rest and absorb all the juices.   Add Cherchies® Vidalia Onion Peach Salsa for dipping.

Serve with Aunt Ester’s Potato Salad and dinner is served! Enjoy.

  • Fig, cinnamon, and honey butter- Combine 1/2 c. (8 Tablespoons) unsalted softened butter with 1/4 cup Cherchies® Fig Preserves with Cinnamon, and 1 Tablespoon honey.

  • Strawberry honey butter- Combine 1/2 c. (8 Tablespoons) unsalted softened butter with 1/4 cup Cherchies® Strawberry Butter Spread, and 1 Tablespoon honey.

Here is how it is done

Soften Butter

It all starts with this key ingredient...butter! Make sure to use unsalted butter so you can control the salt, unless directed otherwise. Allow the butter to come to room temperature. I usually leave the butter out on my counter for a couple of hours, but some sources suggest cutting the butter into chunks and setting aside.

Mix

Once the butter is softened, combine the desired ingredients in a bowl with a whisk, rubber spatula, or a hand mixer. I will often soften several sticks of butter and divide them into ramekins so I can make several flavors.

Chill
Once the butter is in your desired container, chill the butter in the refrigerator for a couple of hours. The butter should be nice and firm when it is ready. Experiment and have fun!

  • Cylinder/log- Turn the mixture out onto a long sheet of plastic wrap, aluminum foil, or parchment paper. Use the wrap/foil to roll the butter into a cylinder. Twist the ends, gradually applying more pressure as you twist in order to make the cylinder taut. Once the butter has chilled, slice the butter into discs or “coins” as some like to say.

  • Bowl- For a more rustic presentation, spread the butter into a pretty bowl or container. Presented this way would make perfect gifts.

  • Shape it- Spread the butter on a baking sheet and once it is chilled, use cookie cutters to create festive shapes OR spread the butter into plastic candy molds before chilling.
