Sweet & Spicy Asian Meatballs Recipe

There is something so darn comforting and fun about meatballs. The quaint little globes are easy to make, and the flavor combinations are unlimited. Serve them with your favorite sauce over noodles or rice, pile them into sandwiches, or serve them as tasty appetizers with toothpicks. A versatile little ball, indeed! So let's talk meatballs, friends, particularly these Sweet and Spicy Asian Meatballs featuring Cherchies® Garlic Seasoning Blend, sriracha, and ginger. 

I usually make these meatballs and freeze them to be later used as an appetizer for guests, but I needed a quick and easy meal for my family one night and served them over rice with this flavorful sauce. Our Cranberry Spinach Salad and Best Darn Garlic Bread accompanied this dish; as suspected, dinner was a hit.

CHERCHIES® GARLIC SEASONING

Ingredients

  • 1 1/2 lb ground turkey, chicken, or pork

  • 1/2 cup Panko breadcrumbs

  • 1 cloves garlic, minced

  • 1 teaspoon (tsp) Cherchies® Garlic Seasoning

  • 1/2 teaspoon (tsp) tsp black pepper

  • 4 green onions chopped

  • 1 egg

  • 2 tbsp Sriracha sauce

  • 1 teaspoon (tsp) freshly grated ginger

  • Cooked Rice (optional- to serve over)

For Sweet and Spicy Glaze

  • Drippings from meatballs

  • 1 jar (10 oz.) Apricot Preserves

  • 1 tbsp soy sauce

  • 2 tbsp Sriracha sauce

  • 1 Tablespoon (Tbsp) cornstarch

  • 1 teaspoon (tsp) rice vinegar

  • 1 teaspoon (tsp) sesame oil

  • 1 Tablespoon (Tbsp) chopped green onions- green part (scallions) only (optional for garnish)

Preparation

Preheat oven to 350 degrees. Line a large baking sheet with parchment paper, spray with cooking spray, and set aside.

In a large bowl, add the meatball ingredients and mix with your hands to combine.   Do not over mix the meat.  Use a 1 1/2" ice cream scoop to measure out perfectly-sized meatballs and place on the greased baking sheet.

Bake for about 20-25 minutes, or until meatballs are golden brown.

While the meatballs are cooking, add the sauce ingredients to a small sauce pan.  Whisk to combine.  Turn the stove on low and cook the ingredients, whisking occasionally, until smooth.  Turn off heat.  With a slotted spoon, remove meatballs from baking pan and transfer to a large skillet.  Add the pan drippings from the meatballs, and the sauce to the skillet.  Turn the skillet on low and cook for a couple of minutes, or until heated through.

Serve the meatballs over cooked rice for a meal, or use with toothpicks as an appetizer.  Garnish with chopped scallions.

Do you like football?  Our home is crazily obsessed with football, and considering our favorite NFL team is in the playoffs, life is good here in Pennsylvania... unless you are a Pittsburgh fan. Game Day is all about the snacks and finger foods, so let's talk about Game Day Food.  Do you have a favorite go-to recipe? 

Cheesy Corn Dog Bites are one of our family's most requested Game Day recipes.  Although we try to eat fairly healthy, hot dogs seem to sneak into the Game Day plans on occasion.  Everything in moderation, right?  These savory wieners, enveloped in a super moist, cheesy, corn muffin and tinged with Champagne Mustard, will score a touchdown with your gang; but, grab a few for yourself because they will disappear right before your eyes.  They are "doggone" good!

Preparation

Preheat oven to 400 degrees.  Add the cornbread mix to a medium mixing bowl.  Add the egg, brown sugar, milk, and grated cheddar cheese to the bowl, and mix all ingredients thoroughly.  

In a small bowl, add the Cherchies Champagne Mustard or Cherchies Hot Banana Pepper Mustard (spicier).  Add the wiener halves to the mustard, mixing to coat. 

Lightly spray the mini muffin tins with cooking spray.  Spoon mixture into the mini muffin tins, filling them 3/4 full.  Place one half of the coated dog in the center of each muffin tin.  Cook for 12 minutes, or until golden brown.

Lately, trending on social media is a fascination with avocado toast. There is a reason why I have not posted a version of this mysterious concoction, mainly because it sounded awful. I love avocados, but I never thought of combining them with bread, eggs, salsa, or other crazy combinations in the cyber world. At least, that was until recently.

While browsing for salsa recipe ideas, I stumbled upon yet another mention of this trend, and my curiosity finally got the best of me. I decided to take charge and create this layered, green obsession with our products. I simply adorned a piece of toast with creamy avocado seasoned with Cherchies® Chardonnay Lime & Cilantro, fluffy scrambled eggs, and a dollop of Cherchies® Black Bean & Corn Salsa. And the best part? This recipe came together in a snap, proving that anyone can master the art of avocado toast.

Cut an avocado in half and score one-half of the avocado with a knife.  Scoop out the avocado with a spoon and put it into a small bowl.  Add lime juice, Cherchies® Chardonnay Lime & Cilantro Seasoning, mix and set aside.  Tightly cover the other half of the avocado with plastic wrap and place it in the refrigerator.

Toast the bread in a toaster.  While the bread is toasting, in a small bowl, beat two eggs.  Turn the skillet on low, and cook the eggs, stirring occasionally until the eggs are cooked through.

On a small plate, begin layering the toast with the avocado, scrambled eggs, salsa, and garnish with the chopped cilantro (optional).  

And voila!  Your healthy, tasty, treat awaits you!  Dig in!

Frankly speaking (pun intended), I love extra help in the kitchen (especially during the holidays or get-togethers), and these simple and easy cocktail wieners are a definite must for your next gathering. Place the ingredients in a slow cooker, turn the slow cooker on low, and walk away! In a couple of hours, your kitchen helper (slow cooker) has cooked these nuggets in time for guests to arrive, leaving more time for you to do what makes you happy. Amen!

Over the years, I have made several variations of this recipe, but the Apple Butter BBQ Smokies Recipe is one of my favorites! With a combination of three ingredients, salty wieners, sweet Cherchies® Apple Butter Spread, and tangy BBQ sauce, this simple appetizer will surely be a "wiener" (pun intended again) at your next gathering:) Plus, with your handy dandy kitchen helper cooking, you can do something for yourself!

*Note- Do not let the mysterious frozen blocks below puzzle you, I usually purchase cocktail wieners on sale, and place them in the freezer for future events.
