Homemade Potatoes O'Brien Recipe

Are you a leftover lover or hater? Personally, I love them; they are kind of my thing!  Leftovers are the perfect medium for recreating new culinary masterpieces (something I am well-known for in our household), and although it takes a bit of planning, the best part is you save money because you waste less. Who doesn't love saving money?

Potatoes O'Brien is a deliciously easy recipe to use extra peppers and our Cherchies Garlic Seasoning.  Traditionally this dish is made with potatoes, onions, and green and red peppers, but use what is available.  It's okay, I give you permission, cooking is about improvising, and since I had a plethora of green, yellow and orange peppers leftover from a neighborhood potluck, I used them instead.  

Make a large batch of these potatoes and divide them!  Use one part for dinner as a side dish, and freeze the rest to later add to eggs for a casserole or quick breakfast burritos.  Either way you "dice" it, you will have a quick and easy tasty side dish in under 30 minutes that your family or guests will devour!

Ingredients

  • 1 Tablespoon (Tbsp.) olive oil, divided
  • 1 large onion, diced
  • 1 green pepper, seeded and diced
  • 1 red pepper, seeded and diced
  • 1 teaspoon (tsp) Cherchies Garlic Seasoning
  • 1/2 teaspoon (tsp) ground pepper
  • 6 gold potatoes (or your favorite potatoes), chopped into 1 inch chuncka (feel free to leave the skins on)
  • 1 large clove of garlic, minced
  • Cherchies Pretty Hot Peppers (optional)


Preparation  
Chop up onions, peppers, and set aside.  Wash and chop the potatoes (no need to remove the skins).  Add the potatoes to a medium bowl of cold water until ready to use, otherwise potatoes may turn grey, which may not go over well with semi-picky eaters;)  Trust me.

In a large skillet, cook the onions and peppers in 1 Tablespoon olive oil and Cherchies Garlic Seasoning until the onions are translucent.  Remove them from the skillet and set aside. 

In the same skillet, add remaining olive oil, potatoes, pepper and and garlic and cook on low until potatoes are soft, about 10 minutes.  Stir occasionally to prevent potatoes from sticking to the bottom of the pan.  After potatoes have cooked, add back in the pepper and onion mixture to the skillet.   (*Optional- for a twist to this dish, add the Cherchies Pretty Hot Peppers (spicier) or Pretty Peppers).  Cook for 5 minutes.  Serve this savory dish with our Savory Champagne Meatloaf Recipe and our Best Darn Garlic Bread Recipe for a complete meal. Enjoy!

Chocked full of fresh vegetables, this tasty colorful salad is the perfect side dish or meal. 

I love this tangy greek-style pasta salad because it is very easy to make and is the perfect side dish to bring to your next party or potluck.  The flavors intensify if made a day ahead.  Add chicken for a light refreshing meal.

Preparation

Cook orzo pasta according to package directions.  Drain Pasta.  In a large bowl, place the chopped tomatoes, cucumbers, and onions.  Season with Cherchies® Garlic Seasoning.

Add the drained orzo to the salad.  Then add Cherchies® Pretty Peppers and lightly season with pepper. Right before serving, add the Lemon Honey Vinaigrette.

Next add the Feta cheese and mix to combine.  Add more dressing to taste.  Serve immediately. (*The flavors intensify if made a day ahead).

Pretty Pepper Hummus Recipe

There's something seriously satisfying about making things from scratch, especially when it's easy and you can control the ingredients.  Take for example hummus, why buy it, when you can make it homemade?  Add the ingredients to a food processor or blender and in minutes, you have a delicious homemade healthy snack or spread.

It's kind of a funny story how this recipe came to be.  I love those "aha!" moments.  Our daughter had been on a hummus kick lately, and came home from school craving hummus, funny kid!  My initial thought was, "What did you do with my once picky daughter?" Of course I didn't have hummus on hand to meet the needs of a hungry teenager, but I remembered a can of chickpeas and a jar of tahini tucked away in my pantry for when I wanted to make hummus someday;)  Then it dawned on me, I also had a jar of our Pretty Peppers in my pantry too. Aha!  Roasted Red Pepper Hummus, our favorite!  Why didn't I think of this before?  I researched various hummus recipes from my cookbooks (yes, I still use cookbooks) and came up with this delicious recipe. My daughter was thrilled and gave it a thumbs up!

So, if you're looking for a fabulous tasty, creamy, hummus recipe, grab a jar of our Pretty Peppers (one of our original products from 1980) or our Pretty Hot Peppers (for a spicier version), and make this recipe today!  It is the perfect dip for vegetables, crackers, or as a spread on sandwiches.  You won't be disappointed:)

Preparation
Add all the ingredients, except the Pretty Peppers to a food processor or blender and mix until the hummus is smooth. Next add the Pretty Peppers to the food processor and pulse a couple of times in order to obtain small bits.  If you like your hummus without bits, run the food processor or blender for a couple of minutes until hummus is completely smooth.  

Drizzle with a teaspoon of olive oil and garnish with some Pretty Peppers and chopped parsley.  Serve with vegetables, crackers, or crostini, or spread on sandwiches in lieu of mayonnaise.  Enjoy!

Pretty Hot Pepper Cream Cheese Recipe

I'm sure many of you have heard of serving hot pepper jelly over cream cheese as an easy appetizer.  How about sweet and spicy Pretty Hot Peppers over cream cheese?  Easy, elegant, and only two ingredients (three if you count the crackers).  Like it sweeter?  Try our Pretty Peppers.

My children hate peppers, I try to disguise them as best as possible when I'm cooking, but they LOVE LOVE LOVE Cherchies® Pretty Hot Peppers and/or Cherchies® Pretty Peppers, especially served this way as an appetizer. They're perfect in eggs, casseroles, salads, crab cakes, dips, and so much more.  You need to try them too!

Spread cream cheese onto a plate.  Spoon the Pretty Hot Peppers or Pretty Peppers over top the cream cheese.  Or, be daring and dollop one half of the cream cheese with Pretty Peppers and the other half with Pretty Hot Peppers and let your guests decide:)  Enjoy!

Serve with crackers.  Easy Peasy...done!
