Baked Blackberry Mustard Wing Recipe

Cook Time: About 40 minutes                           Prep Time:  6-8 hours (for marinade)           Difficulty:  Easy

All my wing aficionados out there here is a wing recipe that will have your guests coming back for more.  

The blackberry preserves in this recipe adds a nice sweetness to the sauce, and our gourmet Cherchies®Champagne Mustard (or Cherchies®Cranberry Mustard) adds that unexpected kick to the wings.

For a spicier wing, try our Cherchies® Hot Banana Pepper Mustard.

This wing recipe is the epitome of "finger-licking good", so make sure you grab plenty of napkins!

Ingredients

Preparation

For the marinade, in a recloseable plastic bag, add the following: red wine, soy sauce, Champagne Mustard, Sriracha hot sauce, and balsamic vinegar.  Mix together.  Add the chicken to the bag and marinate in the refrigerator for at least 6 hours (overnight...even better). 

After wings have marinated, remove the wings from the plastic bag and generously season both sides of the chicken wings with olive oil, Cherchies® Garlic 'n Herb No-Salt Seasoning and pepper and place the wings in a shallow pan.  Brush chicken with the marinade, reserving remaining marinade for a sauce pan.   

Bake wings at 350 degrees for about 40 minutes or until done (sizzling and "fork tender").  Meanwhile, prepare the glaze.  Add marinade to a saucepan.  Remove 1/2 cup of the marinade and add to a small bowl with 1 teaspoon of cornstarch and mix together.  Add cornstarch mixture back to saucepan.  Add Blackberry Preserves and Thyme to the saucepan.

Bring marinade up to a boil (this is important since the marinade was used with raw chicken), and continue to boil, stirring occasionally, until glaze has reduced in half and thickened (about 15-20 minutes). Baste the wings half way through cooking with the glaze.

When wings are done, feel free to garnish with scallions (chopped green part of green onions), but this is optional.  Pair this recipe with our Strawberry Spinach Salad, and you have yourself a meal!

Blackberry Champagne Salmon, round two!

I love leftovers and extending meals throughout the week. Everyone likes to save money, and using leftovers in a new way makes "cents." :)

Our children, on the other hand, are not a fan of leftovers. Maybe it is the word "leftover" that turns them off. It's funny to watch as they stare at the open refrigerator pondering whether new food will magically appear, until I mention, "Hey, there's leftover salmon in the frig." They wrinkle their noses. Little do they know that many of our weekly meals are reconstituted leftovers in some form;)

When I saw the leftover Blackberry Champagne Salmon from the night before, I immediately thought of this lovely light salad with mixed greens, crisp cucumbers, sweet strawberries and blackberries, and fresh tomatoes, all adorned with a tangy Blackberry Poppyseed Dressing, just perfect for Mom. (Our children and my husband are not fans of salads either, but don't worry, they found something else to eat:) Leftovers, check!

Preparation

In a large bowl, combine salad ingredients. Mix all ingredients for the vinaigrette in a small bowl (this recipe makes about a cup of vinaigrette, so you'll have more for later). Right before serving, add salmon and drizzle a couple of Tablespoons of vinaigrette (according to preference) over the salad. Enjoy!

This vinaigrette is light and refreshing, and the combination of blackberries and lemon makes this the perfect summer salad dressing.

Ingredients 

Preparation

In a large bowl, zest lemon.  Slice lemon in half and squeeze juice into the bowl. Add the remaining ingredients and whisk together, until well blended.

Serve with your favorite salad.

Perfect Pesto Recipe

What is Traditional Pesto?
Although the essential ingredients of traditional pesto (Pesto alla Genovese) are basil, garlic, pine nuts, hard, salty aged cheese (Parmigiano, Pecorino Romano, etc.), olive oil, and a bit of salt to taste, pesto lends itself to creativity with whatever herbs (mint, parsley, cilantro, etc.), nuts (any kind), etc. you have on hand (Different regions of Italy use whatever herbs they have on hand, sometimes even a mixture).  This is where our version deviates from the classic with the addition of two seasoning blends, Cherchies® Basil Pizzazz and Cherchies® Garlic Seasoning.  Our version takes this pesto recipe over the top.

How to Make Pesto?

To save time, we also deviated from traditional pesto making (crushing the ingredients with a mortar and pestle) and mixed the ingredients in a food processor instead.   The result?  A vibrant emerald green sauce, full of flavor, aroma, and texture, is the perfect sauce for almost anything.  

What to do With Pesto?
Although the recipe possibilities are endless, some of our favorite uses for pesto are as follows:

  • Mix it in with pasta (of course) for a quick and easy meal.

  • Add it to fresh tomatoes and mozzarella to create an easy classic Caprese Salad.

  • Spread it on fresh ciabatta, and add tomatoes and Mozzarella for a delightful Caprese Sandwich.

  • Add to flavor soups or sauces.

  • Add to meatballs or burgers for an outstanding flavor burst.

  • Turn it into a quick and easy dip when added to sour cream (or Greek yogurt) and mayonnaise.

  • Mix it in with softened butter for a tasty compound butter.

  • Use it as a sauce for pizza instead of pizza sauce.

So many more ideas!

In a food processor (or blender), combine the basil, garlic, Cherchies® Garlic Seasoning, Cherchies® Basil Pizzazz, spinach, and pine nuts.  Process until finely chopped.  While the food processor is running, slowly drizzle the olive oil until the mixture is a smooth, thick paste.  Add pepper to taste.

Once the pesto is to desired consistency, remove from processor and scrape contents with a spatula into a medium bowl.  Stir in parmesan cheese by hand and enjoy on sandwiches, pasta, etc.   Refrigerate in an airtight container.

*Note:  Pesto is best served immediately, as it tends to brown if not used right away.  My trick, add spinach!  Sneaky, huh?  The spinach in the recipe allows the pesto to remain green for some time in the refrigerator.  The result is perfectly green pesto.  Enjoy!

*Note: I have also heard that adding a thin layer of olive oil on top of your newly jarred pesto or covering tightly with plastic wrap (close to the pesto) is another way to prevent your pesto from turning brown.
