Spooky English Muffin Pizza Recipe

English muffin pizzas aren’t revolutionary, but I recently realized I hadn’t made them for my kiddos in years — and they’re still a total hit!.

After school, my hungry crew usually bursts through the door, stares into the open fridge, and dramatically declares, “Mom, there’s nothing to eat!” Meanwhile, snacks are everywhere. So today, instead of pointing them to a granola bar, I handed them a fun kitchen project.

In honor of Halloween, we turned English muffins into ghoulish mini pizzas. I had everything prepped — muffins split, sauce, cheese, and spooky toppings ready — just waiting for my hungry monsters to arrive.

They loved creating their own snacks (and I loved the bonding time). Within minutes, the roaring stopped…and we had delicious, slightly creepy pizzas to show for it!

Here’s what they made:

Ingredients (for each muffin)

  • English Muffins, split apart into halves (I used multi-grain...my kiddos didn't notice)

  • Tomato or Pizza Sauce (1 Tablespoon (Tbsp)

  • 1 teaspoon of Cherchies® Garlic Seasoning (or Cherchies® Basil Pizzazz Seasoning for a stronger flavor).

  • A dash of pepper

  • Shredded Mozzarella or Mexican Cheese Blend

  • Cooked sausage (optional)

  • Olives, sliced for eyes (optional)

  • Jarred Banana Peppers (optional)

Preparation

Preheat oven to 350 degrees.  Split apart English muffins with a fork.  Assemble the pizzas, starting with the sauce, the cheese, and then the toppings.  Sprinkle with Cherchies® Garlic Seasoning (or Cherchies® Basil Pizzazz).

Bake in the oven for 8-10 minutes, or until the mini pizzas are melty;)

Ahhh, cheese.  Who doesn't love cheese?  This cheese spread is a delightful combination of savory and sweet.

For a different twist, heat the cheese spread into a hot dip. Serve with crackers.  A perfect quick appetizer.

Ingredients

Preparation
Combine all ingredients, mixing well.  Cover and refrigerate for at least an hour to to allow flavors to intensify.  Serve with crackers.

This is also great heated in the microwave and served as a hot cheesy dip.

Parmesan Pepper Knots Recipe

Cook Time: 10-15 minutes

Difficulty:  Easy

These savory lemon pepper bread knots are a fabulous easy cooking addition to any meal.  Add butter (or not) and you have a flavor party in your mouth!  These are "knot" your typical rolls.

Ingredients
1 package (11 oz.) refrigerated bread dough
2 Tablespoons (Tbsp) milk
3 Tablespoon (Tbsp) grated Parmesan cheese
2 teaspoons (tsp) Cherchies® Lem 'n Pepper Spicy Blend Seasoning (Or substitute our Garlic Seasoning or our Basil Pizzazz)

Preparation
Cut dough into individual pieces, about 1-inch segments.  On a floured surface, roll each piece into a 12-inch long rope (the middle picture didn't look happy).

Tie each rope in a loose knot.  Tuck one end under the knot and the other end through the center of the knot.

 Brush the knots with milk and roll in a mixture of Parmesan cheese and Lem 'n Pepper.  

Here you have it...bread dough with an attitude!  Our Lem 'n Pepper Spicy Seasoning Blend is truly amazing in this recipe.  You need to try it!  

Place the knots on a greased baking sheet two inches apart. Bake for 10 to 15 minutes in a 350-degree oven.  Try with our Cherchies® Garlic Seasoning for a new "twist" on garlic bread.  Serve with one of our delicious soups and our Strawberry Spinach Salad for a complete meal.  Enjoy!

Sadly, as the leaves turn here in Pennsylvania, we bid farewell to the last of this season's tomatoes. This quick and easy, mouth-watering tomato recipe takes advantage of Summer's bounty. It features Cherchies® Lem 'n Dill Seasoning (or Cherchies® Basil Pizzazz Seasoning), Sherry, and feta cheese. It makes a fantastic side dish, snack, or tasty appetizer.

Ingredients (For each tomato half)

Preparation
Remove stem from the tomato and cut in half (Tip: slice a little off the bottom of the tomato, so it lays flat when cooking). Place cut-side up on a cookie sheet.  Pierce tomato with a fork and sprinkle with sherry and pepper.

Broil tomatoes for 2 to 3 minutes.

In a small bowl combine Cherchies Lem 'n Dill Seasoning, (or Basil Pizzazz) mayonnaise, and feta cheese.  Spoon dill mixture over tomato halves.

Broil tomatoes an additional 2 to 3 minutes or until slightly browned.  Serve hot.  Serves 1 (I doubled this recipe for the pictures).  

Now you know yet another way to use up your tomatoes from your garden.
