Cheesy Guacamole Bites Recipe

This appetizer is super easy and a great way to use leftover guacamole. Let's face it: Guacamole itself is perfection, but turning it into these bite-sized morsels is heaven. The combination of cheese, guacamole, Cherchies® Chardonnay Lime & Cilantro Seasoning, Cherchies® Select Grilling Rub & Seasoning Blend, and spicy sauce is a Tex-Mex party in your mouth!

Preparation (Guacamole photos included on Chardonnay Guacamole Recipe)

Preheat oven to 350 degrees.  While oven is warming, prepare the guacamole.  Halve avocados, and remove pits with a knife. (Put blade into pit, and gently twist to remove). Make small slits in avocado shells with a knife, and scoop out the avocado.

In a medium bowl, mash avocados with a fork.  Depending on your "chunk level" mash until desired consistency (I like to have my guacamole on the chunkier side).

Slice lime and squeeze juice into the bowl.  Stir.

Add salsa, Cherchies Chardonnay Lime & Cilantro Seasoning, chopped onions and mix everything together.  Set aside.

In a small bowl, combine the mayonnaise and the Cherchies® Select Grilling Rub & Seasoning.  Carefully scoop mayonnaise mixture into the corner of a small resealable plastic bag (this will act as your decorating bag), and snip a tiny corner off the end of the bag (or scoop the mixture into a decorating tool).

Line baking sheet with parchment paper and sprinkle about 1-2 Tablespoons (Tbsp) of cheese onto parchment paper, creating compact mounds of cheese.  Bake in the oven for a few minutes. You will need to watch closely, so the cheese doesn't burn.  Allow cheese to cool for a few minutes then carefully transfer to a platter with a spatula.

Using a melon ball scooper or spoon, dollop a scoop of guacamole on top of the cooled cheese disc. Decorate the guacamole bites with the mayonnaise/grilling seasoning mixture.  Ole!

Blackberry Salmon Salad Recipe

Blackberry Champagne Salmon, round two!

I love leftovers and extending meals throughout the week. Everyone likes to save money, and using leftovers in a new way makes "cents." :)

PRINT RECIPE

Our children, on the other hand, are not a fan of leftovers. Maybe it is the word "leftover" that turns them off. It's funny to watch as they stare at the open refrigerator pondering whether new food will magically appear, until I mention, "Hey, there's leftover salmon in the frig." They wrinkle their noses. Little do they know that many of our weekly meals are reconstituted leftovers in some form;)

When I saw the leftover Blackberry Champagne Salmon from the night before, I immediately thought of this lovely light salad with mixed greens, crisp cucumbers, sweet strawberries and blackberries, and fresh tomatoes, all adorned with a tangy Blackberry Poppyseed Dressing, just perfect for Mom. (Our children and my husband are not fans of salads either, but don't worry, they found something else to eat:) Leftovers, check!

If you are looking for a tasty meal for double duty the next day, consider making this delicious Blackberry Champagne Salmon (featuring Cherchies® Champagne Mustard, Cherchies® Blackberry Preserves, and Cherchies® Garlic Seasoning Blend) on day one, then use the leftovers in this flavorful salad the next day. You will not be disappointed.

Chardonnay Guacamole Recipe

Mmmmm...Guacamole.  Very simple to make, especially using leftover salsa (I used Cherchies Oh Sooo Simple Salsa Recipe), but you can always substitute your favorite salsa.

However, the unique blend of spices in our Cherchies® Chardonnay Lime & Cilantro Seasoning takes this guacamole over the top!

Slice lime and squeeze into bowl.  Stir.

Add chopped onions.

The chips are salivating!  For a spooky Halloween version, cut up peppers to resemble Jack o Lanterns, and fill the peppers with the guacamole.  Instant spookiness!
