- 4 potatoes (about 2 lbs.)
- 4 slices of bacon
- 1/4 cup butter
- 1 onion, thinly sliced
- 1 clove, garlic, crushed
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. Cherchies® Lem'n Dill Seasoning
- 2 tomatoes, peeled and diced
Peel potatoes and cut into thin slices. Set aside.
In a large frying pan, fry bacon until browned and crisp. Drain bacon and crumble. Add butter to pan drippings and saute onion and garlic over medium heat until tender.
Add potatoes, salt, pepper and Lem'n Dill Seasoning and continue cooking until potatoes are lightly browned, about 10 minutes. Sprinkle tomatoes over potatoes.
Reduce heat, cover and simmer for about 20 minutes or until potatoes are fork tender.
