Cilantro Lime Corn on the Cob Recipe

Corn on the cob, a quintessential must for summer!  For this recipe, we've spiced things up and decided to try our Chardonnay Lime & Cilantro Seasoning on corn.  Oh my goodness!  As if corn on the cob, slathered with butter, could get any better!  It will definitely be a party in your mouth.  

Ingredients

Preparation

Fill a large pot with water.  Turn stove on high.  Place pot on the stove and when water comes to a boil, place corn in the water.  Cook the corn for about three minutes, or until corn is done to your likeness. 

While corn is cooking, melt butter and  Cherchies® Chardonnay Lime & Cilantro Seasoning in a microwave.  Try our other seasoning blends to "spice things up".

Drain corn and pour butter mixture over corn.  Enjoy!

Chardonnay Guacamole Recipe

Mmmmm...Guacamole.  Very simple to make, especially using leftover salsa (I used Cherchies Oh Sooo Simple Salsa Recipe), but you can always substitute your favorite salsa.  

However, the unique blend of spices in our Cherchies® Chardonnay Lime & Cilantro Seasoning takes this guacamole over the top!

 Ingredients

Preparation

Halve avocados, and remove pits with knife.  (Put blade into pit, and gently twist to remove). Make small slits in avocado shells with knife, and scoop out avocado.

In a medium bowl, mash avocados with a fork.  Depending on your "chunk level" mash until desired consistency (I like to have my guacamole on the chunkier side).

Slice lime and squeeze into bowl.  Stir.

Add chopped onions.

The chips are salivating!  For a spooky Halloween version, cut up peppers to resemble Jack o Lanterns, and fill the peppers with the guacamole.  Instant spookiness!

Sassy Chicken Tostada Recipe

Leftovers get a bad rap, in my opinion, I get it, not everyone likes leftovers. I am a big fan of "waste not, want not" (OMG, I am starting to sound like my mother). Leftovers were foreign to me as a child, but now, as a mother of three, it makes perfect sense because you waste less, which saves money, and saving money is a good thing, right? (Don't tell my Mom she was onto something;). 

I learned early on when our children were younger that I needed a plan to disguise last night's dinner because it made me crazy to see food wasted. So to avoid wrinkled noses and wasted food, my claim to fame (in which I self-appointed myself, "Queen of Leftovers") is reconstituting leftovers into new masterpieces.  Trust me, your family will never know what hit them:)

These delicious Sassy Chicken Tostadas are an innovative by-product of leftover Sassy Chicken Skewers, with shredded chicken, Cherchies® Chardonnay Lime & Cilantro SeasoningCherchies® Select Grilling Rub & Seasoning Blend, refried beans, guacamole, cheese, and all kinds of yummy taco fixings piled on top of crispy corn tortillas. So, are you ready to turn last night’s leftover chicken into these tasty Tostadas?

Ingredients

  • Leftover Sassy Chicken Skewers, shredded

  • 1 can (15 oz. refried beans

  • 4 Corn tortillas

  • 1 cup canola oil for frying (optional)

  • 2 cups Shredded cheese (Cheddar or Montery Jack, or a combination of both), reserving 1/2 cup for garnish

  • 1 small jar of salsa (I used Cherchies Oh Sooo Simple Salsa...well, because it's leftover night)

  • Prepared Guacamole (I used Cherchies Guacamole Recipe)

  • Shredded lettuce

  • Sour cream (I typically use nonfat Greek yogurt as a substitution)

  • Lime'n "Cha" Sauce Recipe (below)

Lime'n "Cha" Sauce Recipe

Preparations

This step could be omitted, since frying is taboo to most, including myself, but life is short, and frying every once in a while...well, it's just better.  It adds a nice crunch to the tostada.  Heat oil in pan on low/medium heat.  One at a time, fry tortillas in oil for only a few seconds on each side.  The edges will start browning, and that will signal to you that it's time to flip.  Drain the tostadas on paper towels.  To soften refried beans, microwave the beans in a small bowl for 30 seconds, and spread over tostadas. Next add the chicken.

Turn oven on broil.  Add cheese, and broil until cheese melts (only a few minutes).  Ahhh "cheese, glorious cheese".   While tostadas are broiling, mix up the ingredients for the Lime'n "Cha" sauce.  I used a decorating tool I had on hand to drizzle on the sauce, but if you don't have one, don't fret, the ingredients can be placed in a small ziplock bag.  Snip off the corner of the bag, and you now have a disposable decorating bag.

Now start piling the rest of the ingredients, starting with the guacamole, then the salsa,  the lettuce, remaining cheese, and the sour cream.  Oh my!

Finally, the sauce.  Doesn't this look pretty?  Dig In!

Oh Sooo Simple Salsa Recipe

Company coming and no salsa?  No problem…Cherchies Salsa seasoning is here to save the day!   I keep this spice and canned diced tomatoes on hand for those impromptu gatherings.  Fresh tomatoes in season are always best, but here in Pennsylvania in the winter, our options are limited.

Ingredients

  • 1 (or 2) cans diced tomatoes, drained
  • 1 Tbsp.  Cherchies Salsa Seasoning (more to taste)
  • 1 small red onion, chopped (optional)
  • 1  green pepper, chopped (optional)

Preparation

Take a can of diced tomatoes (or two depending on your company), and drain the tomatoes.  (Option to add chopped onions and pepper at this point, but not necessary).

Sprinkle some Cherchies Salsa Seasoning…sprinkle some more, and stir.  The more you sprinkle, the spicier it will be.  

You might just have to taste your creation…not that that would be a bad thing.  Be careful, this is for company remember?  This seasoning is soooo yummy.

Add your favorite chips, and voila, simple salsa!  Now I’m hungry!!  Enjoy!
