Life is short; eat figs!

Isn't it funny how our tastes can change over the years? Thankfully, mine did, and so did my children's. Otherwise, we would have missed out on the joy of figs, and life would not be as good!

I never thought my once-picky children would enjoy figs, but they love them, especially our newest preserve: Cherchies® Fig Preserves with Cinnamon. They also love taste-testing all the recipes on the blog.

These decadent fig bars are a fig lover's dream—sweet, buttery, and full of "figgy" goodness, bursting with cinnamon and a hint of coconut. This mouth-watering recipe is easy to make and perfect for any occasion, whether as a dessert, snack, or breakfast treat. Just a tip—hide some away in a cabinet, pantry, or bedroom (just kidding!) because these tasty morsels will be devoured before your eyes, leaving you without any fig bars, and life will not be as good.

*Note- If you do not like figs, this recipe works well with Cherchies® other preserves or Cherchies® Butter Spreads.

Ingredients  
1 1/2 sticks of butter
1 1/2 cups sugar
2 eggs
1 1/2 cups all-purpose flour (for a gluten-free option, substitute Gluten-Free All-Purpose Flour)
1 10 oz. jar Cherchies® NEW Fig Preserves with Cinnamon (Feel free to substitute any of our preserves in this recipe, our Blackberry Preserves, Cranberry Preserves with Champagne, or Cherchies® Butter Spreads.

Topping Ingredients  
1/2 cup quick cooking oats
1/2 cup flour (for a gluten-free option, substitute Gluten-Free All-Purpose Flour)
1 teaspoon (tsp) baking soda
1/4 teaspoon (tsp) salt
1 cup packed light brown sugar
1/2 cup flaked coconut
1 stick of melted butter
Extra coconut for garnishing (optional)

Preparation
Preheat oven to 350 degrees.  Beat the butter and sugar in a medium bowl until fluffy using an electric mixer. Beat in the eggs and gradually add the flour to the butter mixture.  Spread the mixture into a 13 x 9 pan and press down evenly.  Bake for 20 minutes.  

While the crust is cooking, prepare the topping.  In a small bowl (or you can use the same bowl you used to make the bar crust...why dirty more dishes), combine all the ingredients for the topping until crumbly and set aside.

When crust is finished cooking, remove from oven and cool slightly.  Spread Cherchies® Fig Preserves with Cinnamon evenly over the crust.  Sprinkle the topping ingredients over the preserves and return the fig bars to the oven and cook for another 15-20 minutes or until bars are lightly browned.

Sprinkle with more coconut to garnish the bars, but this is completely optional.  It makes it look pretty:) Voila! The perfect easy dessert, snack, or breakfast treat.  Enjoy!

Cranberry Coconut Bars Recipe

Do you love cranberries?  Cranberries are one of our favorites here at Cherchies, and with Christmas around the corner, this easy recipe is the perfect holiday dessert, afternoon snack, or breakfast treat.

I was inspired by an old recipe I had in my cabinet, and instead of Apricot Preserves as in the original recipe, I added a bit of Cherchies® flair by substituting our Cranberry Preserves for the Apricot and added coconut to the mix. Luckily my hunches were correct as the end result was delicious!

This recipe could easily be made with any of our preserves, our Cranberry Preserves with Champagne, Blackberry Preserves,  Fig Preserves With Cinnamon, or any of our butter spreads, but I was feeling festive and chose Cranberry Preserves:)

So, all you cranberry lovers out there, you need to add this recipe to your Cranberry collection.  You won't be disappointed!  AND, because we love ya, all our cranberry products are on SALE this weekend!

Preparation

Preheat the oven to 350 degrees.  Grease a 13 x 9 baking dish with cooking spray.  In a medium mixing bowl, combine the oats, coconut, baking soda, salt, and brown sugar.  Add the melted butter to the ingredients and stir until ingredients are combined and crumbly.  

Press half of the mixture into greased baking dish.  Spread the Cranberry Preserves over the mixture. Sprinkle the remaining oat mixture over the Cranberry Preserves.

Bake for about 30 minutes or until golden brown.  Cool slightly and enjoy!

Pumpkin Spice and everything nice! It's Fall, and what better way to celebrate the season than to jump on the pumpkin "haywagon!" I would be remiss if I didn't share this delicious muffin recipe with you. These moist pumpkin chocolate chip muffins are the best we've ever had! Period. The secret ingredient? Apple Butter!

Our daughter made this recipe in her Family Consumer Science Class (that's fancy for Home Ec-ok I'm dating myself), and yesterday, being one of those dreary, rainy days, was the perfect time to make something together.

In one of those rare teenage moments, our 13-year-old daughter was in the mood for Pumpkin Chocolate Chip Muffins yesterday and wanted to make them with me! (I was cool again, so I jumped at the opportunity:) I suggested we cut out the oil and try her recipe with apple butter! It worked! These pumpkin chocolate chip muffins were super moist with the perfect balance of fall spice and everything nice (like my daughter;).

You need to add this recipe to your favorite Fall recipes. You will not be disappointed, but grab one for yourself, as they will disappear right before your eyes! This recipe would also make a fantastic pumpkin chocolate chip bread. Happy baking!

Ingredients

  • 1 cup canned pumpkin

  • 1/2 cup Cherchies® Apple Butter Spread

  • 1/2 cup water

  • 1/4 cups sugar

  • 2 eggs

  • 1 2/3 cups flour (we have also tested this recipe with King Arthur’s Measure for Measure Gluten Free flour with great results)

  • 1 teaspoon (tsp) cinnamon

  • 1 teaspoon (tsp) baking soda

  • 1/2 teaspoon (tsp) baking powder

  • 1/2 teaspoon (tsp) salt

  • 1/4 teaspoon (tsp) nutmeg

  • 1/4 teaspoon (tsp) ground cloves

  • 1 cup chocolate chips

Preparation

Preheat oven to 350 degrees.  
In a mixing bowl, combine the pumpkin, Cherchies® Apple Butter Spread, sugar, water, and eggs.  Beat until well mixed.  Set aside.  

In a separate bowl, combine the flour, cinnamon, baking soda, baking powder, salt, nutmeg, and cloves.

Slowly add the pumpkin mixture to the dry ingredients, stirring until just combined.  Stir in chocolate chips.  Spoon the batter into a 12 cup muffin tin, lined with paper baking cups.

Bake the muffins for 25 minutes or until muffins are cooked.  Insert a toothpick and if the toothpick comes out clean, the muffins are done!  Cool for at least 10 minutes, then serve them plain, buttered or with cream cheese.  Serve warm.  Enjoy!
Yield: 12 muffins

My mother-In-Law ("Mimi") and I share the same passion for entertaining, but without all the fuss. Her mantra, which I have adapted over the years, is "Easy and Elegant," and her Cream Cheese Pie is one of the many short-cut recipes she has shared with me.

Cream Cheese pie was a foreign concept to me when I first married her son many years ago, but then again, cooking was a foreign concept when I was first married:) Boy, how things have changed. Thank goodness my hubby didn't marry me for my cooking skills back then.

This sweet, creamy, delectable pie is essentially a cheesecake sans the crust baked in a pie plate. Easy and elegant, and a must-have for your recipe collection. Add one of our fruit sauces for a finishing touch and voila!

Cream Cheese Pie Recipe

Ingredients

  • 1 lb. cream cheese, softened (room temperature)

  • 3 eggs

  • 2/3 cup sugar

  • 1/2 teaspoon (tsp) sugar

  • 1/2 teaspoon (tsp) good vanilla

Topping

  • 1 cup sour cream

  • 3 Tablespoons (Tbsp) sugar

  • 1 teaspoon (tsp) good vanilla

Berry toppings (optional) 

Preparation
Beat the first five ingredients together until smooth.  Pour into a lightly greased 9" pie plate.  Bake at 30 minutes at 350.  While the pie is baking, make the sour cream topping by mixing together the sour cream, sugar and vanilla.  

When the pie is finished, cool for 20 minutes and spread the sour cream mixture on top. Return the pie to the oven and bake an additional 10 minutes at 350 degrees.

Make the fruit topping by combining the berries and preserves in a small sauce pan, and cook for about 10 minutes on low.  (Go ahead and mix it up...for this recipe, I mixed our Blackberry Preserves with blueberries).  You could easily use our Cherry, Strawberry, or Apple Butters in lieu of the preserves and substitute the blueberries with cherries, strawberries, or apples.  

Cool for 5 minutes and spoon on top of cream cheese pie.  Enjoy!
