Champagne Chicken Lettuce Wraps Recipe

Folks, if you've never had lettuce wraps before, you're missing out!  They're tasty, satisfying, very low calorie, and a great way to use up leftover chicken!  

I'm always experimenting (playing with my food), and I love when something turns out amazing by chance.  I had never combined our Champagne Mustard with soy sauce, until now.  Wow!

I make these on occasion when my hubby travels, because they're quick and easy and oh so delicious, and not something my hubby would usually eat (more for me).

Recently, I made these wraps for myself for lunch and our 21 year old son happened to be home. His comment, "Mom the kitchen smells amazing, what did you make?"  I  said, "You wanna try?"  Guess what?  My biggest foodie critic, my 21 year-old tried them and loved them!  

The Champagne Mustard combined with soy sauce elevated these wraps to the next level.  You need to try these!  "Quick Cooking" is an understatement. This recipe only takes about 5-7 minutes and serves one, two if you share;)

Ingredients

  • 1 cup Rotisserie chicken (found in most grocery stores), or cooked chicken
  • 1 green onion, sliced, green tops set aside
  • 1 cup packaged coleslaw mix
  • 1 Tablespoon (Tbsp) Coconut oil (could substitute Olive oil)
  • 1 teaspoon Sesame Oil
  • 1 Tablespoon (Tbsp) Cherchies® Champagne Mustard (or substitute our Hot Banana Pepper Mustard for the spicier palate)
  • 1 Tablespoon (Tbsp) Soy sauce
  • Leaves of butter lettuce, separated and washed

Preparation

Separate, wash, and arrange butter lettuce leaves on a plate.  Set aside.  Slice green onions, reserving green tops for the garnish at the end.

In a small bowl, mix the Champagne Mustard and soy sauce.   Turn skillet on to medium and add coconut oil.  Add onions, sauteing for two minutes, then add chicken.  After two more minutes, add the cabbage. the Champagne Mustard mix, and the sesame oil, stirring constantly.  You want cabbage to be tender-crisp, not mushy.

Turn off heat and divide mixture into lettuce cups.  Serve with soy sauce (optional).  Garnish with green onion tops (I forgot this step in the picture because I gobbled them up rather quickly). To share or not to share, that is the question;)  Enjoy!

Pulle Pork Bowl Recipe

One of my son's favorite foods is pulled pork sandwiches (he must have gotten that from me).  After a day of slow cooking the pork and smelling the wonderful aromas all day, it was almost time for dinner...until I realized at the eleventh hour that I didn't have rolls to make the sandwiches.  Yikes!  Think mom, now what? Mashed potatoes!

I quickly peeled a few potatoes and plopped them into boiling water, and in a short few minutes (you get the gist), I had mashed potatoes and a comforting pulled pork bowl!  This recipe is so easy...you throw the ingredients in a slow cooker and walk away!

Ingredients

  • 1 lb. Pork roast, sliced into 1-inch steaks

  • 1 onion chopped

  • Cherchies®Select Grilling Rub and Seasoning (enough to coat both sides)

  • Brown sugar (enough to coat both sides)

  • 1 cup chicken broth

  • Your favorite mashed potato recipe (or you could just use rolls;)

Preparation

Slice pork roast into about 1-inch steaks. Generously rub the pork with Cherchies® Grilling Rub & Seasoning (this seasoning blend is seriously one of my favorite most versatile spices) and brown sugar.

Add onions and chicken broth.

Cook on low for 5-6 hours (or 4-5 hours on high), or until pork pulls apart with forks.   Serve over your favorite mashed potatoes or on rolls for pulled pork sandwiches.  Enjoy!

Ingredients

PRINT RECIPE
  • 1 pint of red grape or cherry tomatoes, sliced in half

  • 1 pint of yellow grape or cherry tomatoes, sliced in half

  • 1 large container of small mozzarella balls, sliced in half

  • salt and pepper to taste

  • 1/2 cup Cherchies Perfect Pesto Recipe

  • 1/4 cup olive oil

Preparation

Slice tomatoes and mozarella cheese in half and put into a large bowl.  Season with salt and pepper.  Add Cherchies Perfect Pesto and olive oil to bowl.  Combine all ingredients and refrigerate for at least an hour, to allow flavors to intensify.  Serve cold or at room temperature.  Enjoy!

For a last minute lunch, I whipped up these cuties for my daughter and her friend.  They were playing in the water and I asked them to give me a warning when they were hungry.  Immediately, they said, "Warning!"  Yikes, I needed something quick.  I came out with these 5 minutes later...mom saved the day, plus the little umbrellas were a hit, a perfect summer treat:)

Ingredients

  • King Hawaiian rolls (or any slider rolls will do)
  • Frozen Meatballs (I usually make my own meatballs (using our Garlic Seasoning) and freeze a bunch for later
  • Your favorite spaghetti sauce
  • Shredded Mozzarella cheese (optional)

Preparation

In a medium pan, heat meatballs in sauce until the meatballs are cooked.  When meatballs are cooked, place one meatball on each of the slider rolls.  (Optional, add mozzarella cheese on top of meatballs) Secure with your favorite pick.  Enjoy!
