Leftover Mashed Potato Cups Recipe

Leftover Potatoes?  No Problem!  Here's a fun re-make that you could either serve as a side or serve it as an appetizer for guests (I've already mentioned my kids and leftovers...here's my sneaky solution).

Ingredients

  • 2-3 cups Leftover Mashed Potatoes
  • 1 Tablespoon (Tbsp.) Cherchies Lem 'n Dill Herbed Butter Recipe (butter and Cherchies Lem 'n Dill Seasoning), melted
  • Leftover salami (or any kind of leftover deli meat, bacon, etc.), chopped
  • 1 large egg
  • 1/2 cup shredded cheese (cheddar, or montery jack, or perhaps a combination of both)
  • Cooking Spray
  • Mini muffin tins
  • Chopped scallions (optional)

Preparation

Preheat Oven to 350.  Spray Mini muffin tins with cooking spray, set aside.  In a medium bowl, mix together, potatoes, Cherchies Lem 'n Dill Butter, egg, and salami.

Scoop spoonfuls of potato mixture into mini muffin tins.

Sprinkle cheese on top (you had me at cheese!) and bake 10 minutes or until golden brown.  Cool for 5 minutes.

Add scallions to make it pretty...and serve.  

Mashed potatoes, reconstituted.  Omg (sorry, I have two teenagers and a young adult...omg means Oh My Goodness... hee-hee...not!).  These are so cute!  Enjoy tricking your family!

Honey’n Lime Grilled Shrimp Recipe

This recipe is so easy, you'll wonder why you didn't have this before!  The combination of lime, cilantro and honey will make your taste buds sing.  A perfect meal or appetizer, or for whenever you feel the need to fire up the grill.  Serve with a salad and fruit...easy peasy dinner!

Ingredients

  • 1 Tablespoon (Tbsp.) or more to taste Cherchies Chardonnay Lime & Cilantro Seasoning

  • 1/2 cup honey

  • 1 lb. shrimp, cleaned and deveined (Frozen cooked shrimp, defrosted would work fine too)

  • 1/2 lime, plus the zest

  • Microplane or zester (Don't have one? Don't fret. A vegetable peeler and knife will do the trick) * See our cooking tip!

  • Wooden skewers (soaked in water for 30 minutes to prevent burning)

Preparation

In a small bowl, combine honey, lime zest, lime juice, and Cherchies Chardonnay Lime & Cilantro Seasoning.  Set aside.

Spray grill lightly with cooking spray.  Turn on grill to high, then down to low when ready to cook. Meanwhile, skewer shrimp onto wooden skewers.  (I find it is easier to grill shrimp this way).  Brush honey-lime mixture onto shrimp.  Put shrimp onto grill, and cook for only a few minutes on each side, until shrimp turn pink (If using fresh shrimp).  For frozen cooked shrimp, cook for a few minutes on each side. Serve on a pretty platter with lettuce, and you have an easy appetizer, lunch, or dinner.

Oh Sooo Simple Salsa Recipe

Company coming and no salsa?  No problem…Cherchies Salsa seasoning is here to save the day!   I keep this spice and canned diced tomatoes on hand for those impromptu gatherings.  Fresh tomatoes in season are always best, but here in Pennsylvania in the winter, our options are limited.

Ingredients

  • 1 (or 2) cans diced tomatoes, drained
  • 1 Tbsp.  Cherchies Salsa Seasoning (more to taste)
  • 1 small red onion, chopped (optional)
  • 1  green pepper, chopped (optional)

Preparation

Take a can of diced tomatoes (or two depending on your company), and drain the tomatoes.  (Option to add chopped onions and pepper at this point, but not necessary).

Sprinkle some Cherchies Salsa Seasoning…sprinkle some more, and stir.  The more you sprinkle, the spicier it will be.  

You might just have to taste your creation…not that that would be a bad thing.  Be careful, this is for company remember?  This seasoning is soooo yummy.

Add your favorite chips, and voila, simple salsa!  Now I’m hungry!!  Enjoy!

Pretty Peppers Flatbread Pizza Recipe

You had me at pizza!  This recipe is quick and easy and perfect for an appetizer, lunch, or snack.  My children love to cook and will often make this recipe after school, and yes, they eat their peppers!  The Pretty Peppers are just the right amount of sweetness with a little tang.  You need to try them!

Ingredients

Preparation

Spread the flatbread with butter or olive oil and top with fresh garlic, Pretty Peppers and Mozzarella cheese.

Place on a baking sheet and broil until cheese is lightly browned and bubbly.
