Lemon Pepper Chicken Legs Recipe

Originally posted 2015. Updated with new content and photos.

Summer means grilling! My family and I grill year-round, and during the winter, my brave hubby battles the elements and grills in his winter coat and snow boots. I'm not that brave. I'm a wimp in the cold and opt to grill inside with my stove's attachment.

This easy recipe requires only a few ingredients and is perfect for those impromptu get-togethers. You could easily use this recipe on chicken breasts, wings, etc., but legs were the choice this time, and I chose to use Cherchies® Lem 'n Pepper Spicy Blend

Try our other flavorful spices too! (I usually make a batch of chicken legs with an assortment of our seasoning blends and have our guests choose their favorites). This recipe would be a lot of fun for a game night meal.

Ingredients:

  • 4 oz. cream cheese, room temperature

  • 4 oz. bleu cheese, room temperature

  • 4 oz. shredded cheddar cheese

  • 1 small onion, grated or finely minced

  • 1 tsp. Worcestershire sauce

  • Cherchies® Lem’n Dill Seasoning, Cherchies Pepper Pizzazz, and Cherchies® Select Grilling Rub & Seasoning Blend (We tested this recipe with these seasoning blends, but feel free to experiment with your favorite and report back to us!)

    Preparation

Allow the cream cheese to rest on the counter in the package for about 30 minutes, or until softened to room temperature. (If you are in a rush, try this trick. Place sealed package of cream cheese, sans the box, in a small bowl with warm water. This will allow the cream cheese to soften quicker).

In a medium bowl, mix together the cream cheese, bleu cheese, cheddar cheese, minced onions, and Worcestershire sauce. Refrigerate for 30 minutes (can also be made ahead to chill in refrigerator over night).

When close to serving, evenly distribute the Cherchies® Seasoning Blends on three plates. (This will be used to roll up the mini cheese balls.) With a melon ball scooper, scoop out individual portions of the cheese mixture and roll in the various seasoning blends.

When ready to serve, add a pretzel stick for individual tasty portions. Enjoy!

Chicken Tortilla Casserole Recipe

Chicken Tortilla Casserole Recipe

Cook Time:  40 minutes (if using cooked chicken)
Difficulty:  Easy

I'm always in search of new easy chicken recipes, and this unique mexican dish is perfect for those busy nights.  The green chilies and Lem 'n Pepper Spicy Blend Seasoning add a nice tang to this dish.

Add a dollop of our Chardonnay Guacamole and serve with a salad and our Savory Wedge Bread, and you have an easy peasy meal.

Your family and guests will ask for seconds!

Ingredients

  • 1 onion, sliced

  • 1 Tablespoon (Tbsp) olive oil

  • 1 can (4oz.) green chilies

  • 2 cups tomato juice

  • 2 teaspoons (tsp) Cherchies® Lem 'n Pepper Spicy Blend Seasoning or Cherchies® Salsa Seasoning

  • 2 cups Velveeta cheese

  • 1 can (12 oz.) Evaporated Milk

  • 2 1/2 lbs. chicken, cooked and cut into pieces (could purchase a pre-cooked rotisserie chicken at your local grocery store)

  • 6 oz. tortilla chips, broken into small pieces

  • 1 1/2 cups cheddar cheese, grated

Preparation
Saute onion in olive oil until tender.  Add green chilies and blend well.  Add tomato juice and Cherchies® Lem 'n Pepper Spicy Blend Seasoning and heat through.  Melt Velveeta cheese in evaporated milk in a saucepan over low heat (I cheated here and used my microwave).

Add chicken pieces.  Combine the chicken-vegetable mixture with the cheese mixture.

In a large casserole dish, alternate layers of tortilla chips with the chicken mixture, and Sprinkle grated cheese on top of the casserole.

Bake in 350 degree oven for 30 minutes until cheese is melted and bubbling.

Serve with Savory Wedge Bread and Strawberry Spinach Salad for a complete meal.  Enjoy!

Lemon Dill Dip Recipe

This is one of my favorite dip recipes!  It's light, it's refreshing, and our Cherchies® lemon dill spice makes this dip irresistibly good.  Cherchies® Lem 'n Dill Seasoning is our original and still most popular seasoning (Did I mention it comes in two sizes?).  Obviously it is fabulous in a dip, but It's also great on chicken, fish, eggs, and vegetables.

Combining equal parts of mayonnaise and sour cream enhances the flavors of the spices in this dip, and I would definitely NOT leave out the mayonnaise.  (Actually, you could substitute the sour cream with greek yogurt and use light mayo for a lighter version).  I would recommend making this dip a day ahead, as the flavors tend to intensify over time!  We also have a no-salt lemon dill seasoning!  Try our other seasoning blends in lieu of the Lem 'n Dill for an array of tasty dips.

Ingredients

Preparation

Combine all the ingredients in a medium bowl.  Chill dip for at least two hours (can be made a day ahead).

For a fun twist on veggies and dip, try arranging the veggies in shot glasses with the dip at the bottom. Vloia...instant cute individual appetizers!  I made these cuties for my parent's recent surprise 50th Anniversary party. They were a huge hit!

Maybe your kids would even eat their veggies presented this way;)  (Mine did!)

For a Halloween flair, cut up orange peppers to look like Jack o Lanterns, cutting a wide mouth to allow the dip to ooze out.  Spooky!  Enjoy!
