Strawberry Chocolate Chip Pancakes Recipe

There is nothing that says "Good Morning" better than hot, fluffy, buttermilk pancakes made from scratch!  Do not let the words, "from scratch," intimidate you, for making homemade pancakes versus those from a box (even Strawberry Chocolate Chip Pancakes) is actually very simple.

For years, Bisquick was my go-to pancake mix until my dear friend, Stacy, shared her homemade recipe with me.  I have followed it ever since, but have mixed it up over the years by adding berries, chocolate chips, or "whatever" (something I am known for in my family).  This time, I sat on the edge of my seat awaiting the family's reaction, because when they weren't looking, I added Cherchies® Strawberry Butter and chocolate chips to the batter! As suspected, our kiddos were skeptical when they sat down to eat (Oh no! They spied the pinkish hue of the pancakes...!), but despite the contorted faces, they tried them anyway, and loved them!    

Once you make these deliciously fluffy, fruity pancakes from scratch, you'll wonder why you didn't make them that way sooner.

*Note:  Butter tends to burn, so I find it best to use oil to grease the griddle or pan.

Preheat a griddle or cast iron pan to medium.  Lightly oil the griddle or pan.  In a medium bowl, combine all the ingredients, except for the chocolate chips, until just combined.  Don't over mix.  

Add 1/4 cup of pancake batter to the griddle, and sprinkle the pancakes with the chocolate chips.  Our kiddos like to make faces with the chocolate chips when they make their own pancakes:)  Pancakes are ready to flip when bubbles appear on top of the pancakes.  

Serve with our Fruit Salad for a satisfying breakfast, brunch, or yes, dinner:)  Enjoy!

Hawaiian Sweet and Sour Smoked Sausage Recipe

How does smoky sausage, sweet tangy grilled pineapple, sweet roasted peppers, and spicy pineapple-habanero sauce sound?  Does it sound like a flavor party in your mouth? You betcha!

I love simple tasty recipes.  Sausage is a food we normally don't eat very often in our household, but I couldn't pass up this tasty recipe and try it on my kiddos.  Everything in moderation, right? The result?  Our kiddos LOVED this recipe!

Perhaps it was the grilled pineapple that sealed the deal?  Or perhaps it was the sweet and spicy Pineapple Habanero Sauce?

Either way, this recipe was a delightful twist to our normal culinary routine and a definite must-try for your family.

Never heard of grilled pineapple? Then you're missing out! (Grilling brings out the sweetness of the pineapple.  It's amazing, but not necessary for this dish).  Here, we used a stove-top grill to cook the pineapple, but you could easily grill the pineapple on a grill or simply cook in the pan with the sausage. Once the pineapple is cooked, chop the pineapple into 1 inch sections.

Cook and stir the sausage over medium-high heat for 5 minutes or until sausage is lightly browned.   Add the pineapple, Cherchies® Pretty Peppers, and the Terrapin Ridge Farms Roasted Pineapple & Habanero Sauce to the pan.  Cook and stir for 5 minutes.  Serve over cooked rice.

Garlic Herb Flank Steak With Bleu Cheese Sauce Recipe

It's time to bring out the grills and get ready for grilling season.  It doesn't get much easier than three ingredients.  Complete your BBQ menu with our Herbed Corn on the Cob , our Strawberry Spinach Salad, and Swiss Style Baked Beans.  Enjoy!

Pierce the steak with a fork and marinate with Garlic & Herb Vinaigrette overnight. Grill the meat until desired doneness. Allow the steak to rest for ten minutes. While steak is resting, spread the steak generously with the Bleu Cheese Sauce. Slice against the grain.   Enjoy!

Chicken and Roasted Pineapple Burrito Recipe

Cook Time:  60 minutes  Difficulty:  Easy

Stewed chicken is used to create delicious lunch or dinner.  You could easily substitute cooked Rotisserie chicken if you're short on time.  Serve this dish with Pepper Jam Grilled Pineapple and our Strawberry Spinach Salad for a complete meal.

Preparation

In a large pot, put the chicken, 1 whole onion and large pinch of salt and and pepper and cover with cold water.  Bring the pot to a boil then reduce to a simmer and cook until the chicken is cooked through, about 1 hour. Remove the chicken and allow it to cool.  When the chicken is cool enough to handle, remove the meat, discarding the bones and skin. If you are using breasts instead of a whole chicken, cube the chicken.

Wrap the tortillas in a damp towel and microwave for 45 seconds or until warm and pliable. Heat the beans in a small pot over low heat. Lay out one tortilla onto a flat surface. Place 1/4 of the chicken, into the middle of the burrito. Top with 1/4 cup of cheese, 1/4 of the beans and 2 tablespoons of the Terrapin Ridge Farms Roasted Pineapple & Habanero Sauce. Fold the bottom of the tortilla up over the filling then fold the sides in and roll up from the bottom. Repeat with remaining ingredients and garnish with remaining sauce.
