Cherry Hot Pepper Bruschetta Recipe

Red, white, and bleu:)  Summer cherries make my mouth salivate, and this recipe is perfect as a quick appetizer or a snack.  The hot pepper jam adds a nice kick to the cherries.  If you would prefer a sweeter version of this recipe, without the kick, then try our Strawberry or Cherry Butters.

Who says you have to save this for guests?  Treat yourselves to these little morsels...go ahead, it's ok:)

Ingredients

Preparation

Slice the baguette into 1/2 inch slices and set aside.  Turn the grill on to high, allowing the grill to heat up for 5 minutes, then turn grill down to low.  Place baguette slices on grill and brown for a few minutes on each side. The bread will be slightly toasted on each side but yet soft in the middle...a perfect base for the bruschetta mixture.

Doesn't that look pretty?  Next, pit the cherries and coarsely chop.

In a medium bowl, mix the cherries with the Cherchies Cherry Hot Pepper Jam.  You could stop right here and just eat spoonfuls of this glorious mixture.  But wait, there's more!

The assembly...Make sure to do this just as guests arrive.  Lay the grilled bread slices on a platter. Generously top the grilled baguette slices with the cherry mixture.  Then, sprinkle the slices with the blue cheese and almonds.  Heaven!  Enjoy.

Ingredients

Preparation

Turn the Grill onto high to heat up, then when grill is ready, turn down to low.

Sprinkle Cherchies Pepper Pizzazz Seasoning generously over both sides of the steak, pressing the seasoning blend into the meat.  While grill is firing up, allow meat to sit out for a bit to absorb the flavors.

Grill steaks for about 5-8 minutes on one side, depending on thickness and your "pink"  preference, and then flip the steaks over to finish grilling.  Take steaks off grill and allow them to rest for about 8 minutes.

But then it gets even better...ADD BUTTER! You heard me right.

After the meat has rested, slice it up!  Serve it with our Strawberry Salad, and you have a lovely warm weather (or cold;) meal.  Enjoy!

Lemon Dill Mashed Potatoes Recipe

Lem 'n Dill Mashed Potatoes Recipe

Lem 'n Dill Mashed Potatoes Recipe

Mashed potatoes in my opinion, are the quintessential comfort food. This recipe adds a new "twist" to regular mashed potatoes.  In this recipe, we used Cherchies Lem 'n Dill Seasoning to add a nice zing to the potatoes. Another option would be to experiment with some of our other spices.  Garlic Potatoes, made with our Cherchies Garlic Seasoning or Garlic 'n Herbs No-Salt Seasoning would be a refreshing substitution.  For those who like to "spice things up", our Select Grilling Rub and Seasoning would make the perfect compliment to a Tex-Mex dish.

Ingredients

  • 8-10 Gold potatoes, peeled and cut in half
  • 10 cups of water, or enough to cover potatoes
  • 1-2 teaspoons (tsp) salt
  • 3 Tablespoons (Tbsp.) Butter
  • 4 oz. Cream Cheese, room temperature
  • 1 Tablespoon (Tbsp), or more to taste Cherchies Lem 'n Dill Seasoning
  • 1/3 cup 1/2 and 1/2 (add more or less for desired consistency)

Preparation

In a large pot, boil potatoes in water with 1-2 teaspoons of salt, until potatoes are fork tender (this means they seem tender when you put a fork into them).  Drain potatoes, and while potatoes are still hot, add butter and Lem 'n Dill seasoning (or if you were really organized, you could dip into your premade Cherchies Herbed Butter Recipe).  This can either be done right in the pan or in a large bowl.

Add 1/2 and 1/2 (more or less depending on taste...everyone has his or her own consistency preference), and cream cheese.  Mix with a mixer until potatoes are light and fluffy.

My mouth is watering...Grab a spoon.  Enjoy!

Peachy Salsa Chicken Recipe

Peachy Salsa Chicken Recipe

Peach and cheese?  Crazy!  Who would have thought that Peach salsa and cheese would make for an easy and tasty dish?  I tried something new, and voila!

This is a very quick and easy recipe, perfect for those busy nights, but elegant enough for guests.

Ingredients

Preparation

Preheat oven to 350 degrees.  Place chicken breasts (one at a time) in a resealable plastic bag (or between two sheets of plastic wrap), and pound with rolling pin (very therapeudic) to about 1/2 inch thick. Sprinkle each side of chicken breast with garlic seasoning and pepper.  In a large skillet, cook chicken breasts for a couple of minutes on each side.

Spray 9x13" casserole dish with cooking spray, and place chicken into pan.

Smother each chicken breast with 1/3 cup Cherchies Vidalia Onion Peach Salsa.  Cook chicken in oven for 15 minutes. Remove from oven and sprinkle cheese over chicken breasts. Cook chicken an additional 10 minutes, or until cheese is melted, and remove from oven.  Use remaining salsa as a garnish for chicken breasts.  Serve with Spanish rice and a salad for a lovely meal.

Enjoy!
