Happy 2018! Now that the holidays are behind us, I am sure many, like me, have a plethora of leftovers, including vegetables from the vegetable tray. Am I right? Instead of tossing the veggies, dice them up to create this unique, flavorful Irish Vegetable Soup.

Vegetable soup is very satisfying and full of fresh vegetables and herbs, but not necessarily noteworthy, in my opinion. But travel across the ocean to The Emerald Isle (Ireland), and you will find not only breathtaking countryside with warm and friendly native folk but also delicious vegetable soup presented entirely differently than in the states. Instead of chunky vegetables swimming in a sea of full-bodied broth, the Irish version is a smooth, pureed blend of root vegetables, garlic, herbs, cream, and butter.

There is nothing like travel to cause a bit of culture shock, particularly in the cuisine, but I am rarely shocked by soup! My hubby and I traveled to Ireland last summer to celebrate our 25th Anniversary, and this humble dish graced almost every pub and fancy restaurant throughout the country. I have to admit; I was a bit skeptical at first about pureed vegetable soup, but my husband and I sheepishly smirked at each other and indulged.

Wow! If I had not been in the presence of others, I might have licked the entire bowl clean! It was so tasty and filling that I had to recreate this pool of deliciousness at home!

When I re-created this soup, I thought for sure the texture alone would send my teenagers running, but it didn't! The aroma drew them out of their rooms. "Mom, what smells so good?" "Vegetable soup," I replied. "Would you like to try it? It is Ireland's version." They liked it so much that this soup now makes a weekly appearance in our home.  

So, for my version, I used potatoes (sweet or regular), garlic, Cherchies® Garlic Seasoning, celery, parsnips, carrots, onions, and sometimes leftover vegetables, such as broccoli or spinach. And, because you puree the entire batch, even the most discerning vegetable haters might enjoy this dish. It is a great way to get your family to eat more veggies. You need to give this version of vegetable soup a try. It is easy, delicious, and satisfying, and you may never return to the chunkier version again!

Ingredients

  • 2 Tablespoons (Tbsp.) butter

  • 1 small onion, diced

  • 2 ribs of celery, washed and diced

  • 3 carrots, peeled and diced

  • 1 parsnip, peeled and diced

  • 3 potatoes with skins on, diced (feel free to substitute sweet potatoes)

  • 1 tomato, chopped

  • 1/2 cup spinach (optional)

  • 2 cloves of garlic

  • 1 Tablespoon (Tbsp) Cherchies® Garlic or Cherchies® Garlic'n Herbs Seasoning Blends, divided

  • 1/2 teaspoon (tsp) ground pepper

  • 2 cups vegetable broth (ok to substitute chicken broth)

  • 1/4 cup half & half (substitute fat-free greek yogurt for a lighter version)

  • Blender


Preparation  

Add butter, celery, onions, garlic, parsnips, and carrots to a large soup pot or dutch oven.  Season with 1 teaspoon (tsp) Cherchies® Garlic or Garlic'n Herbs Seasoning blend and pepper.  Sauté the vegetables, until onions are translucent.

Add the vegetable or chicken broth to the pot.  Add potatoes, tomato, and rest of the Garlic Seasoning to the soup pot.   Throw in some Kale or Spinach of leftover broccoli if you have it on hand (optional).  Simmer until potatoes are soft and then add the half and half.

Once vegetables are finished cooking, turn off the stove and allow the soup to cool for five minutes.  Now onto the blender.  Carefully add the soup ingredients to a blender, making sure to only fill the blender half-full.  You may have do a couple of batches.  To ensure the hot soup does not explode everywhere, remove the center portion of the blender to allow steam to escape and put a clean towel over top.  If you have a blender that is equipped to handle soup, then this step is not necessary.  Hold the lid covered with the towel down and puree.  Or, wait until the soup has cooled about 20 minutes or so and then puree.

Pour the pureed soup into your favorite soup bowl, serve with bread, and enjoy this tasty version of Ireland's vegetable soup!  If you are feeling fancy, carefully add a little half and half and make a fun design.   Enjoy!

Lately, trending on social media is a fascination with avocado toast. There is a reason why I have not posted a version of this mysterious concoction, mainly because it sounded awful. I love avocados, but I never thought of combining them with bread, eggs, salsa, or other crazy combinations in the cyber world. At least, that was until recently.

While browsing for salsa recipe ideas, I stumbled upon yet another mention of this trend, and my curiosity finally got the best of me. I decided to take charge and create this layered, green obsession with our products. I simply adorned a piece of toast with creamy avocado seasoned with Cherchies® Chardonnay Lime & Cilantro, fluffy scrambled eggs, and a dollop of Cherchies® Black Bean & Corn Salsa. And the best part? This recipe came together in a snap, proving that anyone can master the art of avocado toast.  

Wow! What a flavor explosion in your mouth! I cannot believe I waited so long to try avocado toast! If you're on the fence about it, let me assure you: it's not just delicious; it's addictive! Cut an avocado in half and score one-half of the avocado with a knife.  Scoop out the avocado with a spoon and put it into a small bowl.  Add lime juice, Cherchies® Chardonnay Lime & Cilantro Seasoning, mix and set aside.  Tightly cover the other half of the avocado with plastic wrap and place it in the refrigerator.

Toast the bread in a toaster.  While the bread is toasting, in a small bowl, beat two eggs.  Turn the skillet on low, and cook the eggs, stirring occasionally until the eggs are cooked through.

On a small plate, begin layering the toast with the avocado, scrambled eggs, salsa, and garnish with the chopped cilantro (optional).  

And voila!  Your healthy, tasty, treat awaits you!  Dig in!

Are you up for a twist to your dinner routine?  Get the gang together, grab some pizza dough, some toppings, and reinvent pizza night, because it is time make mouth-watering strombolis!  

Strombolis are rolled up deconstructed pizzas, filled with savory meats, gooey cheese, and tangy sauce, the perfect casual meal for friends or family or an easy appetizer for a crowd.  (Game Day would be perfect!).  So, what goes inside of a stromboli?  The world is your oyster friends (although I am not sure oysters would go over well as a filling:). There are just as many infinite toppings as there are for pizzas such as leftover holiday meat and cheeses, vegetables, meatballs, the combinations are endless! 

This tasty stromboli features ham, turkey, two different kinds of cheese, and one of our favorite mustards, Cherchies® Champagne Mustard!  It adds that special zing to this dish!  Yum!  By all means, if you're feeling spicy :), then Cherchies® Hot Banana Pepper Mustard should be your mustard of choice, or if you are feeling festive, then use Cherchies® Cranberry Mustard.  We have made this recipe dozens of times, and each time we mix it up by adding different fillings.  So, go, create, be happy!  Let us know what combinations you come up with using our products and we will post your recipe!

Preparation

Preheat oven to 350 degrees.  Rollin', rollin' rollin' (sorry).  On a lightly floured surface, roll out the dough into a rectangle on a floured surface.

Spread the dough with the mustard of your choice, followed by a layering of ham, cheese, turkey, or whatever combination that pleases you.

Next, add the mozzarella cheese.  Starting with the long end, carefully roll up the filled dough.

Place the stromboli, seam side down on parchment paper, pinch together the ends to ensure the dough is completely sealed, cut small slits into the dough, and brush the dough with the egg.

Sprinkle the stromboli with Cherchies® Garlic Seasoning.   Cook stromboli in the oven for 20 minutes, or until the outside is a golden color as pictured. When stromboli is finished cooking, slice it and serve it with marinara sauce.

To think I was a picky eater when I was a child. Thank goodness my palate changed as I would have missed out on one of my favorite combinations, Caprese, a simple Italian salad made with tomato, basil, and mozzarella cheese. Add that to fresh grilled Ciabatta bread, and the result is a colorful, flavorful sandwich that screams summer. I introduce our Caprese Ciabatta Sandwich Recipe.

Caprese sandwiches are impressive by themselves, with bright green pesto, juicy ruby red tomatoes, and creamy mozzarella cheese, but add Cherchies® Basil Pizzazz to the pesto, and it will elevate this sandwich to the next level.

With a bounty of summer tomatoes and fresh basil abundantly available this time of year, you have no excuse but to make this delicious classic Italian-inspired sandwich. You will not be disappointed.

Ingredients

  • 4 Ciabatta rolls, sliced

  • Cooking spray

  • 1/2 cup mayonnaise (could substitute Olive oil)

  • 1 Tablespoon Cherchies® Garlic Seasoning

  • 1/2 cup Perfect Pesto Recipe

  • 1 or 2 large, ripe tomatoes, sliced into 1/4 inch slices

  • 8 oz. fresh mozzarella cheese, sliced into 1/4 inch slices

  • 1/4 cup white Balsamic vinegar (optional)

Preparation

Spray grill with a light coating of cooking spray.  Light grill and turn to high for five minutes, then turn down to low.

Slice Ciabatta rolls in half, and spread each half with 1 Tablespoon (Tbsp.) of mayonnaise (or olive oil).

Sprinkle Garlic Seasoning on rolls.  Place rolls mayonnaise side down onto grill for about 3 minutes, or until bread has grill marks.  Remove bread from grill.

Now it's time for the pesto...my mouth is already salivating!  Spread 1 Tablespoon of the pesto on one slice of the Ciabatta.  (Feel free to put the pesto on all the slices at this point to save time.  I chose to do it this way for the "glamour shot" later).

Next add the tomato, mozzarella, and another Tablespoon of pesto to the other slices of Ciabatta (see my comment earlier).  You could drizzle the balsamic vinegar at this point, but this is optional.  

Now for the assembly of the sandwiches!  Once these beauties were assembled, I placed the Caprese sandwiches on a plate and placed them on the grill (which was cooling from earlier) for a few minutes.  It was worth the few extra minutes, as the cheese melted ever so slightly, and then heaven:)  Buon Appetito (that's Italian for enjoy your meal)!
