Champagne Chicken Recipe

I am always looking for new and easy chicken recipes.  The Champagne Mustard adds a nice zing to this chicken dish.  For a more festive version of this recipe, try using our Cranberry Mustard in place of the Champagne Mustard and wow your guests!

Ingredients

Preparation

Season chicken with salt and pepper. Melt butter in large frying pan and saute chicken 6 to 8 minutes until lightly browned.

Lower heat. Remove chicken. Stir flour into drippings. Slowly add broth, stirring to make a smooth sauce. Slowly add light cream, stirring constantly. Stir in Cherchies® Champagne Mustard and cook until sauce bubbles. Return chicken to pan and spoon sauce over each piece. Cover and simmer 10 minutes. Serve over rice.

Serves 8

Ingredients

Preparation

Preheat oven to 400º F. Line a baking sheet with aluminum foil and set aside. 

Season the pork chops with pepper. In a small bowl, whisk together mustard, oil, and remaining spices and brush mixture onto both sides. Press the grated Parmesan cheese into both sides of the chops (I am pretty liberal with the cheese. I like a thick coating but a thin one will work, too.) Place the chops on the baking sheet. Bake for approximately 20 minutes, or until coating is browned and the chops are cooked. For a slightly crispier texture, broil for one minute.

Petite Pois Salad Recipe

Ingredients

  • 2 boxes (10 oz. each) frozen peas

  • 1 box (10 oz.) snow peas

  • 1 can (8 oz.) water chestnuts, sliced

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream

  • 1 1/2 Tbsp. Cherchies® Lem'n Dill Seasoning

Preparation

Steam peas for one minute Drain and put in salad bowl. Add water chestnuts.

Blend mayonnaise and sour cream with Cherchies® Lem'n Dill Seasoning. Add this mixture to peas. Toss well to coat evenly. Chill 30 minutes and serve on lettuce leaves.

Serves 8 - 10

Pepper & Cheese Salad Recipe

Ingredients

  • 2 cups low-fat creamy cottage cheese
  • 2 tsp. lemon juice
  • 1/4 cup Cherchies® Pretty Peppers, drained
  • 1/2 cup pineapple chunks, drained and chopped
  • 1/4 cup diced celery
  • 4 Tbsp. chopped walnuts or pecans

Preparation

Combine lemon juice and cottage cheese in a blender until smooth. Stir in the next four ingredients.

Place mixture on lettuce leaves and chill before serving.
