Lem 'n Dill Cucumber Roulades Recipe

Impress your guests with this easy appetizer, or save it for yourself as an elegant snack.

Ingredients

  • 2 English cucumbers (often referred to as seedless cucumbers), partially peeled and cut into 1 inch pieces
  • 1 (8 oz.) package cream cheese, room temperature
  • 2 Tablespoons (Tbsp.) Cherchies Lem 'n Dill Seasoning
  • Smoked salmon

Preparation

With a vegetable peeler, peel strips of skin off, creating a striped effect.  (This is merely for presentation and completely optional).  Seedless cucumbers have very thin skins and don't normally need to be peeled.

Slice cucumber with a knife into 1 inch chunks.

Hollow out half of each slice (don't go all the way through) with a small melon ball scooper or small spoon.  Set aside.

In a medium bowl, combine Cherchies Lem 'n Dill Seasoning with cream cheese.

Spoon small amounts of Lem 'n Dill mixture into cucumber rounds.  Carefully remove small pieces of smoked salmon, and roll into a decorative presentation.  (See picture).

Sprinkle some Lem 'n Dil Seasoning on top of salmon...a lovely elegant treat.

Cheesy Hot Pepper Jam Thumbprint Recipe

Try this cheesy appetizer at your next party.  The cheese and the hot pepper jam, make for a lovely savory presentation, and the combination of the two will make your taste buds sing.  

Ingredients

Preparation

Preheat oven to 400 degrees.

Blend butter, flour, and cheese in a food processor until dough forms into a ball. 

Wrap dough in plastic wrap and chill in refrigerator for 30 minutes.  

Roll dough into small balls (about 1 1/2 inch in diameter) and place 1 inch apart on a baking sheet.

Bake in the oven for 5 minutes.  Remove cheese cookies from the oven, and press your thumb into the top of each ball, creating a well.  Spoon 1 teaspoon pepper jam into the well.  Bake for another 5 minutes, or until edges are lightly brown.

Chardonnay Guacamole Recipe

Mmmmm...Guacamole.  Very simple to make, especially using leftover salsa (I used Cherchies Oh Sooo Simple Salsa Recipe), but you can always substitute your favorite salsa.  

However, the unique blend of spices in our Cherchies® Chardonnay Lime & Cilantro Seasoning takes this guacamole over the top!

 Ingredients

Preparation

Halve avocados, and remove pits with knife.  (Put blade into pit, and gently twist to remove). Make small slits in avocado shells with knife, and scoop out avocado.

In a medium bowl, mash avocados with a fork.  Depending on your "chunk level" mash until desired consistency (I like to have my guacamole on the chunkier side).

Slice lime and squeeze into bowl.  Stir.

Add chopped onions.

The chips are salivating!  For a spooky Halloween version, cut up peppers to resemble Jack o Lanterns, and fill the peppers with the guacamole.  Instant spookiness!

Leftover Mashed Potato Cups Recipe

Leftover Potatoes?  No Problem!  Here's a fun re-make that you could either serve as a side or serve it as an appetizer for guests (I've already mentioned my kids and leftovers...here's my sneaky solution).

Ingredients

  • 2-3 cups Leftover Mashed Potatoes
  • 1 Tablespoon (Tbsp.) Cherchies Lem 'n Dill Herbed Butter Recipe (butter and Cherchies Lem 'n Dill Seasoning), melted
  • Leftover salami (or any kind of leftover deli meat, bacon, etc.), chopped
  • 1 large egg
  • 1/2 cup shredded cheese (cheddar, or montery jack, or perhaps a combination of both)
  • Cooking Spray
  • Mini muffin tins
  • Chopped scallions (optional)

Preparation

Preheat Oven to 350.  Spray Mini muffin tins with cooking spray, set aside.  In a medium bowl, mix together, potatoes, Cherchies Lem 'n Dill Butter, egg, and salami.

Scoop spoonfuls of potato mixture into mini muffin tins.

Sprinkle cheese on top (you had me at cheese!) and bake 10 minutes or until golden brown.  Cool for 5 minutes.

Add scallions to make it pretty...and serve.  

Mashed potatoes, reconstituted.  Omg (sorry, I have two teenagers and a young adult...omg means Oh My Goodness... hee-hee...not!).  These are so cute!  Enjoy tricking your family!
