Sherried Tomato Recipe

Cook Time:  8-10 minutes

Difficulty:  Easy

As I mentioned in the latter part of the summer, this year's garden was exceptional!  I had a plethora of tomatoes!    

I think I'm on round three but sadly, this will be the last of the tomatoes for the season, as we live in Pennsylvania and the leaves have started to turn.

I came across this mouth-watering recipe from my mother-in-law and had to post it.  Our Lemon Dill Seasoning or our New Basil Pizzazz elevates this recipe to a new level!

This quick and easy tomato recipe takes advantage of summer's bounty and is a fantastic side dish or snack.  In fact, this recipe would make a tasty appetizer!

Ingredients (For each tomato half)

Preparation
Remove stem from the tomato and cut in half (Tip: slice a little off the bottom of the tomato, so it lays flat when cooking). Place cut-side up on a cookie sheet.  Pierce tomato with a fork and sprinkle with sherry and pepper.

Broil tomatoes for 2 to 3 minutes.

In a small bowl combine Cherchies Lem 'n Dill Seasoning, (or Basil Pizzazz) mayonnaise, and feta cheese.  Spoon dill mixture over tomato halves.

Broil tomatoes an additional 2 to 3 minutes or until slightly browned.  Serve hot.  Serves 1 (I doubled this recipe for the pictures).  

Now you know yet another way to use up your tomatoes from your garden.

Pretty Vegetable Bean Salad Recipe

"Easy and Elegant"  is my mother-in-law's mantra and I have resolved to follow it with my own family and friends.   Who wants to be in the kitchen the entire time?  This easy recipe mainly focuses on pantry items and is about as simple as it gets.  It's the perfect salad for a potluck, game day tailgating, or a summer get together because it can be made ahead and can be served at room temperature.   You could also serve this dish as a dip with chips for an easy healthy appetizer.  

I like this recipe because it serves a crowd (12-14 people), but it also it uses our Pretty Peppers, which imparts a nice tang to this dish.  

Ingredients

  • 3/4 cup Cider Vinegar
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 teaspoon (tsp.) salt
  • 1/2 teaspoon (tsp.) pepper
  • 1 Tablespoon water
  • 15 oz. can black-eyed peas, drained and rinsed
  • 15 oz. can pinto beans, drained and rinsed
  • 15 oz. can white shoe peg corn, drained and rinsed (could use fresh corn)
  • 1/2 jar Cherchies® Pretty Peppers
  • 1 small onion, chopped
  • 1 cup of celery, chopped
  • 1/2 cup green pepper, chopped


Preparation

Mix the Cider Vinegar, oil, sugar, salt, pepper, and water in a sauce pan and bring to a boil.  Cool completely.

In a large bowl, mix the remaining ingredients and then add the vinagrette.- refrigerate and serve with a slotted spoon (you may want to pour off some marinade before serving).  Serves 12-14.  Enjoy!

Savory Wedge Bread Recipe

It was a cold and dreary day here in Pennsylvania, and I wanted comfort and thought of soup...and bread. Unfortunately, bread is one of my weaknesses...and chocolate...and cheese...hmmm,  I may  have to go to weakness anonymous.

All kidding aside, this bread is perfect, it's light and fluffy with just a hint of heat.  Try serving this along with our White Bean Chili With Jalapeno Peppers.

Ingredients

Preparation

Combine all ingredients except for the Parmesan cheese.  

Spread dough in a greased 8-inch round pan.  Sprinkle cheese over the dough before baking at 400 degrees for 20 minutes, or until done.  

Cut into wedges to serve.  A perfect accompaniment to one of our fabulous soups.  Happy Cooking!

Cilantro Lime Corn on the Cob Recipe

Corn on the cob, a quintessential must for summer!  For this recipe, we've spiced things up and decided to try our Chardonnay Lime & Cilantro Seasoning on corn.  Oh my goodness!  As if corn on the cob, slathered with butter, could get any better!  It will definitely be a party in your mouth.  

Ingredients

Preparation

Fill a large pot with water.  Turn stove on high.  Place pot on the stove and when water comes to a boil, place corn in the water.  Cook the corn for about three minutes, or until corn is done to your likeness. 

While corn is cooking, melt butter and  Cherchies® Chardonnay Lime & Cilantro Seasoning in a microwave.  Try our other seasoning blends to "spice things up".

Drain corn and pour butter mixture over corn.  Enjoy!
