Cooking Tip: What to do with wrinkled tomatoes

Poor little wrinkled cherry tomatoes...We were away, and when we returned, we found these little guys in the back of the refrigerator.  They didn't ask for this!  But alas, there is hope for these poor fellows...sun dried tomatoes!  As I've mentioned before, I hate to waste food, so here's my solution...

Slice the tomatoes in half, brush with olive oil, then sprinkle with Cherchies Garlic Seasoning (or Cherchies Garlic'n Herbs No Salt Seasoning), and pepper.

Slow roast on 200 degrees for a couple of hours, until they turn into beautiful sun dried tomatoes.  Cool them completely and place into a ziplock bag and let them chill in the freezer until you're ready to use them in a recipe.

How to use leftover herbs

  • Make herbed ice cubes-Wash and dry fresh herbs, chop them by hand, or place them in a food processor and pulse. Spoon the chopped herbs into ice cube trays, cover with water, freeze, and store the cubes in ziplock freezer bags when frozen. Use individual cubes to season your favorite dishes.

  • Add to sandwiches- Fresh herbs such as Basil can be used instead of lettuce to liven up sandwiches. -Cook's International Kitchen Hacks

  • Dry them- Tie up bunches of herbs with kitchen twine and hang herbs to dry. OR, for a quick dry, wash and dry herbs and place them on a clean paper towel and microwave for 30-40 seconds. Either way, crumble dried herbs and place them in an air-tight container to use in your favorite meals. - Cook's International Kitchen Hacks

  • Create spice packets- For spices that need to be removed from cooking, such as Parsley or Bay Leaves, fill a clean tea filter bag (the ones used for loose tea) with the desired herbs, tie it with kitchen twine, and remove the packet when finished cooking.   • Make infused oils or vinegar- Add your favorite herbs to olive oil or vinegar to cook tasty meals. See How to Make Infused Oils.

  • Make compound butter- Add freshly chopped herbs to softened butter to create flavorful compound butter. See How to Make Compound Butter. The perfect gift for the cook in your life!

  • Make herbed cream cheese spreads- Add herbs to softened cream cheese and serve with bagels, spread on sandwiches, or dip with vegetables.

  • Make vinaigrette- Add your favorite chopped fresh herbs to vinegar and olive oil for a delightfully fresh vinaigrette.

  • Create Simple Syrups- Add herbs to equal parts of water and sugar, and cook until sugar is dissolved and cool. Add the simple syrup to your favorite beverage or cocktail.

What To Do With Muffing Tins- 25 Amazing Hacks

Do you know the muffin pan? Yes, the muffin pan! The one who lives on Bakery Lane? Sorry:) Who knew that aside from baking, the simple muffin pan could be helpful in so many ways, in the kitchen, around the house, in craft projects, etc.? Re-purposing everyday kitchen gadgets, such as muffin pans (aka muffin tins), is an excellent strategy for saving money, saving space, and getting organized; plus, it's just plain fun. Amen! Who's with me?

I had no idea when I started this blog post about the infinite uses of a muffin tin! I knew this was one of my favorite kitchen tools, but now I am 100% convinced it IS my favorite!!! Happy Fall, everyone! Fall has officially arrived, meaning it's prime time to enjoy all things apples, particularly apple butter (or any fruit butter, for that matter). We love fruit butters! We love them so much that we wanted to share twenty of our favorite uses for them in the kitchen this Fall and year-round.   

So, what the heck are fruit butters anyway?  Neither a preserve nor a jam, fruit butters are a class all their own, mixed with spices and slow-cooked to a thick, "butter-like" consistency. There is no dairy, as the name would suggest. Most are familiar with the famous Apple butter, but what about other fruit butter, such as Cherry or Strawberry Butter? Did you know that most fruits can be made into fruit butter spreads?  

So, fruit butters are more than just a spread for toast?  Correct! The uses are endless, and to celebrate Fall and because we love you, here are 20 of our favorite ways to use fruit butters! What's your favorite way to serve fruit butter?  Comment below.

  1. Use in recipes in lieu of sugar in an apple crisp or applesauce.

  2. Mix 1 part butter spread to 1 part maple syrup for French toast and pancakes.

  3. Mix it into roasted or baked sweet potatoes.

  4. Use butter spreads and pecans as a crepe filling.

  5. Spread it on toast or English muffins instead of jelly.
